Question: Cabbage stuff from Jamaican restaurants?
It's always a side at Jamaican places: sometimes greasy, sometimes steamed, spiced cabbage recipe?

A really basic recipe for let's say a 1/2 head of cabbage:

Heat about 2 tablespoons of cooking oil on medium heat.
Add a clove of smashed garlic, a chopped scallion, 1/2 scotch bonnet pepper or habanero pepper finely diced with seeds removed, and one small slice of a tomato..
Saute until the garlic softens but don't let it brown.
Add the cabbage now and make sure it stir it around good fashion.

You have a decision to make at this point about what you want to taste.
You can either add about 1/4 cup of shredded carrots and about 2 tablespoons of apple cider vinegar
or
a good half cup of chicken broth.

Drop 2 or 3 pimento seeds in there.

Cover it if you want it tender or leave the top off if you want it with a lil crunchiness to it. Either way, turn the temp down to medium low and let it cook for 10 to 15 more minutes.
