Question: Will sushi rice lose it's stickiness if I refrigerate it for later use in a sushi roll?
Answers:

Don't refrigerate the rice. It's ok to leave it out...room temp. in a cool place. Trust me on this. The moment that you refrigerate your rice, it will change the consistency. It will make it even more starchy and begin to harden or firm up.

I'm a personal chef.



Sushi are supposed to be eaten fresh.
Right after the chef prepare, eat directly on the spot.
Or at least eat them on the same day if you buy wrapped from shop or prepared by yourself at home.
Put them in your fridge will harden the rice and loose the freshness of the fish (since it sliced thin).
Specially if you add mayonnaise on the roll, it could be worse.
