what is arborio rice?!

Question: What is arborio rice?
that is used in rissotto?

Answers:

Hi: It's a short grained Italian rice which cooks up rather ''creamy'' because of it's starch. A good risotto is made with this type of rice where you stir constantly, adding broth to it until it becomes thick and creamy.

Me - I love mushroom rissotto.

Arborio rice is an Italian short-grain rice. It is named after the town of Arborio in the Po Valley, where it is grown. Cooked, the rounded grains are firm, creamy, and chewy, due to the higher amylopectin starch content of this rice variety, thus they have a starchy taste of their own, yet blend well with other flavors. It is used to make risotto, although Carnaroli and Vialone Nano are more commonly used to prepare the dish. Arborio rice is also used for rice pudding.

the others have answered. most of it is produced in the Piemonte region in Northern Italy. the Comune di Arborio is not located in the Po River Valley. it is to the northwest
