Do I need to press the brown sugar to compact it in my measuring cup?

Or just let it loose? My cookies ended up so limp and elastic.

Yes, anytime in baking that i have seen brown sugar is always packed or pressed. It has something to do with how the batter comes together, because with cookies you have the butter, brown sugar, and white sugar and eggs and they are creamed together, if you don't have the right amount in the bowl it will not form right, thereby giving you uneven cooking, not browning the way they should, etc. i always pack or press the brown sugar and take a butter knife and scrape across the top to get an exact measurement.. hope this helps

The recipe should specify packed brown sugar. Then again, I've never seen a recipe where it didn't call for the brown sugar to be packed.

A lot of baking recipies call for ingredients to be 'weighed' not measured. It's best to go by weight since baking isn't the same as cooking, it involves science when you are dealing with rising, etc. (Which is why I never bake).

The possibility exists that it could be something else, too. Humidity (and I think altitude too) can affect baking.

I always use the palm of my hand to press the brown sugar into the measuring cup.

It's amazing how much more you can fit in when pack it.

Air (empty space) doesn't count in your cookies which is probably why they're limp.
