I'm thinkin', "Well, why bother making sushi?" Makizushi isn't real Japanese food anyway. Why try?
You make kosher sushi the same way you would make regular sushi. The one area of concern would be any fish you might want to use. Kosher fishes are those with scales and fins, like salmon or tuna; shellfish (like shrimp, crab...) are not kosher.
If you want it to be vegetarian, then there is even less of a problem since vegetarian cuisine is inherently kosher. Make sure your ingredients (rice, seaweed, etc) have reliable kosher symbols on them (like the OU, OK, Star K...) and you are good to go!
Sushi is actually really easy to prepare while keeping kosher — all you have to do is avoid shellfish, eel, and other non-kosher sea creatures. If you're making vegetable sushi, you don't have to worry at all!
Where do you buy your ingredients? I recommend picking up cooking supplies from a kosher market, so that you know that every meal you cook contains only kosher ingredients.
