Common ingredients:
Meas: Beef, chicken and pork.
Seafoods: Shrimp, squids and fish.
Vegetables: Mushrooms, baby corn, snow peas, asparagus, broccoli, cabbage, celery, and carrots.
Other possible ingredients: Scallops, sea cucumber, imitation crab sticks, fish balls, fish cake, bamboo shoots, gai-lan (Chinese broccoli), cauliflower, napa cabbage, black fungus, onions, red/green bell peppers, water chestnut, bean sprouts, pork liver, pork kidney, and pork maw.
Uncommon ingredients: Clams, octopus, cuttlefish, dried shrimp, and chives.

I make a good lo mein if you need a recipe:
Stir fry the meat of your choice, add the veggies of your choice and continue to cook until tender. Add flat, wheat noodles which you have softened in hot water (drained) and add the following sauce:
Sauce
2 Tbsp Dark Soy Sauce (NOT regular soy sauce)
2 Tbsp Sake or Vodka (don’t use rum, too sweet)
1 tsp Sugar
1 Tbsp Corn starch dissolved in 1/3 cup cold water
2 tsp Oil
2 tsp Hoisin Sauce
Heat, stirring until sauce thickens. Add some bean sprouts, sliced scallions and enjoy.
