Chicken a la King

Ingredients:
12 ounces chickens, cooked (in fairly large cubes)
2 ounces butter
3 tablespoons flour
450 ml milk
1 stalk celery, sliced
2 ounces button mushrooms, sliced
1/4 cup green peppers, deseeded & chopped
1 cup canned pimiento, chopped
Salt
Black pepper, freshly ground
2 egg yolks
2 tablespoons double cream
1 tablespoon Worcestershire sauce
Parsley, Chopped

Steps:
1. Melt 1 1/2 ozs butter, add the flour and cook for 2 to 3 minutes, stirring.

2. Gradually add milk and cook, stirring, until thick and smooth.

3. Melt the remaining butter and saute sliced celery, button mushrooms and chopped pepper until soft but not coloured.

4. Add celery, mushrooms, pepper, chicken and pimiento to the sauce and heat through.

5. Season to taste. Combine the egg yolks, double cream and Worcestershire sauce. Add to the chicken mixture and heat through.

6. Transfer to a serving dish and sprinkle with chopped parsley.

Chicken a la King

1 cup diced, cooked chicken meat
1 (10 ounce) package frozen mixed vegetables, thawed
1 1/2 cups chicken broth
2 teaspoons cornstarch
1 (5 ounce) can evaporated milk
salt and pepper to taste

DIRECTIONS
Combine chicken, vegetables and broth or wine in a medium saucepan over medium low heat. Stir all together and let simmer until heated through.
In a small bowl beat cornstarch into evaporated milk and add to chicken mixture. Reduce heat to low and cook, stirring constantly, until thickened. Season with salt and pepper to taste, unless leftover chicken has enough of its own seasoning already. Serve hot.

Ingredients
- 6 frozen phyllo sheets thawed
- Butter Flavor Cooking Spray
- 1 red bell pepper, seeded and finely chopped
- 1 can (10 3/4-ounce) condensed creamy chicken mushroom soup
- 1 teaspoon dried whole thyme
- 1/8 teaspoon hot sauce
- 1 cup milk
- 2 tablespoons dry white wine if desired
- 1 can HORMEL? Premium Chunk Breast of Chicken (5-ounce), drained and flaked
Servings: 6
Prep Time: 30 minutes
Cook Time: 30 minutes

Directions
Heat oven to 400°. Spray one phyllo sheet liberally with cooking spray, fold in half lengthwise. Again, spray with cooking spray and fold in half crosswise. Repeat procedure an additional time. Gently press folded sheet into muffin pan, slightly overlapping edges to fit cup. Repeat with remaining sheets. Bake 5 to 7 minutes or until golden brown and crisp. Set aside. Coat a medium saucepan with cooking spray and place over medium-high heat until hot. Sauté bell pepper until soft, 3 to 5 minutes. Add soup, thyme, and hot sauce. Gradually stir in milk, blending thoroughly. Add wine, if desired. Stir in chicken. Bring mixture to a boil, reduce heat and simmer 5 minutes. Spoon approximately 1/2 cup mixture into prepared shells.
