Question: Simple, tasty Japanese dish?
For my Culinary Arts class I'll have one hour to prepare a Japanese dish. I need something simple that won't make a huge mess and uses easy to find ingredients. Any suggestions? Links to recipes with pictures or any personal recipes would be appreciated.

Answers:

Katsu is really easy to make. Its basically breaded meats and/or vegetables which are deep fried and served with something similar to Worcester sauce. Typically pork or chicken is used (the type of cut doesnt really matter) and for vegetables, you can use onions, aubergines or courgettes. Just cut them, salt and pepper and then cover them with flour (making sure to shake of excess flour), dip them in egg and then breadcrumbs. I would suggest using panko breadcrumbs but normal ones would be fine. Then fry them.

Tempura is also quite easy to make with normal ingredients. Tempura is typically served with a tsuyu sauce but can go quite well with mayonnaise or a dip of salt and pepper mixed together. Instead of prawns, chicken is easier to prepare for tempura. You can also use potatoes, carrots (sliced thinly), mushrooms, aubergines and okra. The batter is just flour, an egg and cold water. Try not to over mix as it works better when there are little clumps of flour. It should also be slightly on the runny side.

You can also try Yakisoba (fried noodles with mixed vegetables and usually pork). Use egg noodles as they are easier to come by and for the sauce, Worcester sauce is a handy shortcut.

You can also try Okonomiyaki. Shredded cabbage and cooked belly pork cut small mixed into a batter of flour and water and then fried like a pancake. The batter should be quite thick. Usually served with mayonnaise and Worcester sauce.



I would make Namasu

4 x Cucumbers
1 1/4 tbs Salt
1/3 cup Sugar
1/3 cup Rice wine vinegar
1 1/4 tsp Grated fresh ginger root
1/3 tsp Salt or to taste



* Prepare the cucumbers by slicing them in half. Remove the seeds if they are large. Slice in thin diagonals. Sprinkle with 1 1/4 tablespoon of salt and place in a bowl. Let stand for 20 minutes.
* Rinse, drain and remove excess water by putting the cucumbers in a kitchen towel and squeezing out the water. Combine the sugar, vinegar, remaining salt and the ginger. Pour over the cucumbers and chill.

* Prepare the cucumbers by slicing them in half. Remove the seeds if they are large. Slice in thin diagonals. Sprinkle with 1 1/4 tablespoon of salt and place in a bowl. Let stand for 20 minutes.
* Rinse, drain and remove excess water by putting the cucumbers in a kitchen towel and squeezing out the water. Combine the sugar, vinegar, remaining salt and the ginger. Pour over the cucumbers and chill.



How about Japanese Yakitori Chicken. It is easy to make and uses only a few simple Japanese cooking ingredients.

Sushi! buy lots of sushi rice ( be careful with it) and top with smoked or raw fish.
