Question: Im making Pastelon puertorriqueno for the first time,im not puerto rican what is sofrito?
Im Costa Rican and i saw this show where they made it, it looks really good i want to make it for my family today, i dont know what sofrito is? maybe we call it a different name ? thanks

First off YUMMMMMMMMMMMMMM!!!!!!!! I LOVE pastelon! I base my recipe off the recipe from website elboricua.com. They have easy recipes that are pretty authentic. Sofrito is a base that Puerto Rican use for pretty much all their food. It consists of:

1 bunch Cilantro
1 bunch recao
1 head of garlic
3 large onions
1 lb. ajíes dulces
2 large bell peppers
? cup olives with pimientos
1 sm jar of roasted red peppers
1 tbsp. capers
2 tbsp. crushed oregano
1 tbsp. salt
1 tsp. black pepper
1 cup EVOO (extra virgin olive oil)

Once everything is diced and mixed together you can either put it in a large container and refrigerate it or pour it into an ice tray and freeze it. If you choose to refrigerate it, be sure not to use anything metal to scoop it out, that can contaminate it and ruin it. If you decide to freeze it, each "ice cube" is one serving.
But pretty much everyone has their own recipe so you can mix and match what you like best.
As far as putting it in the microwave, I think it should be fine but you probably won't get that extra crisp taste that you get from an oven. Good luck y buen provecho!
