2 15.5 oz cans cannellini beans
1 cup halved grape tomatoes
1/4 cup diced red onion
1/2 cup diced celery
1/2 cup diced red bell pepper
1/2 cup chopped flat-leaf parsley
Pita Chips
Directions:
Whisk dressing ingredients together and toss with salad ingredients in a large bowl. Chill at least 1 hour before serving. Serve with pita chips, if desired.

Ingredients:
1 1/2 cups orzo (rosamarina)
1/2 cup diced orange sweet pepper
1/2 cup diced yellow sweet pepper
1 cup cherry tomatoes, halved
1/4 cup finely chopped red onion
1 cup crumbled feta cheese
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
1/4 cup fresh lemon juice
3 tablespoons extra virgin olive oil
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
Directions:
Cook orzo according to package directions; drain well and rinse with cool water. In a large bowl toss together cooked orzo, sweet pepper, tomatoes, onion, feta cheese, basil, and parsley. In a medium bowl whisk together lemon juice, olive oil, garlic, salt and pepper; pour over salad and toss. Let stand 20 minutes. Toss again and serve.

Easy Antipasto Salad

This salad combines the ingredients of an antipasto appetizer--ham, salami, pepperoni, sweet pepper, and cheese--with lettuce, and Italian dressing.
Ingredients:
1 bag ready-to-serve lettuce
1 thick slice ham (1/2 lb.)
1 thick slice cooked salami (1/2 lb.)
12 pepperoni slices
1 green pepper, chopped
8 oz chunk provolone cheese
8 oz chunk colby cheese
Italian dressing of choice
Directions:
Empty bag of lettuce and put the green pepper onto a platter or large bowl. Cut the meats and cheeses into 1" cubes; arrange on top of lettuce. Drizzle dressing of choice over salad.

Winter Fruit Salad With Lemon Poppyseed Dressing

Ingredients:
1/2 cup white sugar
1/2 cup lemon juice
2 teaspoons diced onions
1 teaspoon Dijon mustard
1/2 teaspoon salt
2/3 cup vegetable oil
1 tablespoon poppy seeds
1 head romaine lettuce, rinsed, dried and torn into bite
4 ounces shredded swiss cheese
1 cup cashews
1/4 cup dried cranberries
1 apple, peeled, cored and cubed
1 pear, cubed

Steps:
1. In a blender or food processor, combine sugar, lemon juice, onion, mustard and salt.

2. Process until well blended.

3. With machine still running add oil in a slow steady stream until mixture is thick and smooth.

4. Add poppy seeds and process just a few seconds more to mix.

5. In a large serving bowl combine the romaine lettuce, shredded swiss cheese, cashews, dried cranberries, cubed apple and cubed pear.

6. Toss to mix then pour dressing over salad just before serving and toss to coat.

Weekend Potato Salad

INGREDIENTS:
* 3 cups diced cooked potatoes
* 1/2 cup sliced celery
* 1 tablespoon diced green bell pepper
* 1 tablespoon diced pimiento
* 2 tablespoon chopped sweet pickles
* 2 tablespoons minced onion
* 1/2 cup mayonnaise
* 1/2 teaspoon salt
* dash pepper
* 1/2 teaspoon prepared mustard
* 1 1/2 teaspoons lemon juice
* 1/4 cup heavy cream

PREPARATION:
Combine potatoes, celery, green pepper, pimiento, sweet pickle, and onion; chill. When ready to serve, combine remaining ingredients; toss with chilled potato mixture. Add a little more mayonnaise if necessary and taste for seasonings.
Serves 4.
