Is it ok to freeze a nalgene water bottle?
like put it in the freezer overnight to make an ice cube in the bottle for the morning?
Will it hurt the plastic or anything?

Yes you can...do it all the time...just don't fill it all the way...water expands when it freezes...fill it about 80% of the way from the top and you will be fine.
Why are you afraid of hurting the plastic? It's plastic! Damn...
It should be ok just keep the lid off when it's in the freezer. I had mine for almost a year.
