All Day Breakfast Salad

2 cups spinach leaves, cleaned
1 1/2 tablespoons Balsamic Dressing, recipe follows
1/2 cup cherry or grape tomatoes
1 hard boiled egg, chopped
2 slices Canadian bacon, cooked in a grill pan and sliced into ribbons
2 tablespoons chopped fresh parsley leaves
1 whole-wheat pita, toasted and cut into quarters

Place spinach in a bowl. Add the Balsamic Dressing and the tomatoes and toss. Top with the egg, canadian bacon and parsley leaves. Serve with the pita pieces.

Balsamic Dressing:
3 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon Dijon mustard
Salt and freshly ground black pepper
In a bowl, whisk together the olive oil, vinegar, and mustard. Season, to taste, with salt and pepper.

Honey Chicken Stir-Fry
Ingredients
1 lb. Boneless skinless chkn. breasts, cut into 1 in. pieces
1 Garlic clove, minced
3 tsps. Olive or canola oil, divided
2 tbsp. Reduced-sodium soy sauce
1/8 tsp. Salt
1/8 tsp. Pepper
1 pkg. (16 oz) frozen broccoli stir-fry vegetables
2 tsps. Cornstarch
1 tbsp. Cold water
Hot cooked rice
Preparation

In a large nonstick skillet or wok, stir-fry chicken and garlic in 2 tsps oil. Add the honey, soy sauce, salt and pepper. Cook and stir until chicken is lightly browned and juices run clear. Remove and keep warm.

In the same pan, stir-fry the vegetables in remaining oil for 4-5 minutes or until heated through. Return chicken to the pan; mix well. Combine cornstarch and cold water until smooth; stir into chicken mixture. Bring to a boil; cook and stir for 1 minute or until thickened. Serve over rice.

ONE THING THAT IS HEALTHY AND INEXPENSIVE IS CHICKEN AND YELLOW RICE IT'S SIMPLE TO MAKE AND IF YOU WANT TO MAKE A LOT FOR MORE THEN ONE MEAL IT'S GREAT FOR FREEZING ALL YOU NEED TO DO IS GET SOME BONELESS SKINLESS CHICKEN BREAST BAKE IT ON 325 FOR 35 MINS WHILE THATS COOKING MAKE THE RICE (MAHATMA YELLOW RICE) IT TAKES ABOUT 20 MINS.AFTER THE CHICKEN IS DONE LET IT COOL AND CUBE IT UP ADD IT TO THE RICE AND YOUR DONE.ALSO THERE IS NO NEED TO PUT ANY SPICES ON THE CHICKEN UNLESS YOU WANT TO ADD IT.I HAVE MORE IDEAS IF YOU NEED ANYTHING ELSE.

Since I'm into healthy food and my boyfriend is a junk food junky, I can help.

When I cook meats, like steaks, or pork chops, or Chicken, I use very little salt and grill or broil them, then I make fries for my boyfriend and grilled veggies for me.

For example
Preheat oven to 400

Cut up 1/2 of an eggplant into strips
quarter 1-2 large tomatoes
slice 1 large sweet onion
slice 1 green and 1 red pepper into strips
toss with olive oil, (enough to cover all veggies) and salt and pepper to taste.

Bake in oven for 20-25 minutes.
You can also try putting rose-marry on the veggies and they are soo good.
Also, try grilling veggies like the above on a grill pan when grilling chkn and make a box of instant rice and and you have a very healthy and yummy meal.

Also, don't be afraid to actually make yourself dinner, like roasted meats and veggies, it may seem like alot of time but it's not.

Pasta is also a very nice option.
Just boil a small amount of past (whatever you like)
and toss with pesto sauce or even olive oil and garlic.

Trust me there are tons of things out there for you to make, you just have to watch out for them.

Frittata. Ham.
6 eggs beaten.
1 teaspoon oil.
? cup grated cheese
200g ham.
Tomato.
Salt and freshly ground Black Pepper.
1 table spoon of Fresh chopped parsley.

Heat the fry pan and add oil on a low heat and add cheese, ham, tomato, salt and pepper to beaten eggs and stir in.
Pre heat the grill.
Pour in the egg mixture and cook for 5 minutes. Do not stir.
To finish cooking put under the preheated grill until the top is brown.
Serve sprinkled with the parsley.
