Substitute for Cognac in recipe?!


Question: Substitute for Cognac in recipe?
Alright, so my American Studies class is having an immigrant food day, where we all need to make a different cultural dish. I'm making Koulourakia, a Greek dish, and I've run into a little problem. The recipe calls for 2 tablespoons of Cognac. This last part is technically not allowed by my school and my teacher has suggested I try substituting or leaving the Cognac out. So, is there something I can substitute for the Cognac, or better yet, is it a crucial part of the recipe, or can I leave it out?

Cognac is not crucial. I use a little orange juice.

Leave it out. I doubt 2 tablespoons will effect the dish, at least in my experience I never much tasted the difference in recipes I've made when I added the cognac.
