Question: Has anyone heard of a Chinese/north Vietnamese recipe for a chicken soup dish which is cooked...?
...for 12 to 24 hours?
While in the Northern part of Vietnam, I was in a restaurant where a big pot of chicken soup with a whole chicken was brought was brought to the table and served. The chicken which was cooked for 12 to 24 hours was cooked with herbs and rice and was served at almost every table. Does anyone know the name of this dish and how to cook it?

Clay pot chicken is a very popular dish in Vietnam, and using a whole chicken makes it a special dish, because a whole chicken is a luxury (meat being fairly scarce). However, the recipes I've seen may require 24 hours of marinating, but not 24 hours of cooking--no more than 4 or 5. Maybe that is because I am used to Western recipes, designed for Western cooking methods?

Anyway, here are a couple of clay pot recipes, though there are many--sort of like everyone having their own special way of making fried chicken or BBQ in the US.
