Frittatta is an Italian type omelette and can be eaten hot, room temperature or cold. It is a great way to use up leftovers and is an easy breakfast, lunch or dinner. You start it on top of the stove and finish it in the oven or can finish it on top of the stove.
Preheat oven to 375 degrees
Beat 2 eggs for each serving
Add leftover cooked sausage, pasta and grated parmigiana cheese to the eggs. Heat a non-stick oven proof skillet or saute pan over medium heat, add 1 tablespoon of olive oil or more if cooking more than 6 eggs, when the oil is hot, add the egg mixture to the skillet and reduce heat to medium low, cook until bottom is set and brown, put in preheated oven to finish cooking. You can also place a large flat plate or tray over the skillet and flip the Frittatta out onto the plate, bottom side up, now slide back into frying pan and finish cooking until set and lightly brown on both sides.
Sauteed bell peppers, garlic and onions or other leftover roasted vegetables or potatoes, any type of grated or cut up cheese, deli or leftover cooked meat, poultry or shrimp all work well in this dish. Just be sure your flavors blend. Chopped fresh parsley and/or basil is a nice addition.

ok something easy. brown some diced sausage (your favorite kind) and add a couple eggs in it. scramble it all together, make sure you cook the egg and sausage thoroughly. use as filling in flour tortillas. sausage and egg tacos. simple and yummy!
Hamburgers. They need an egg or two to help keep them together, and keep the moisture inside. It's a substitute for bread crumbs.
