What does goat milk taste like?


Answers:
The taste of goat's milk depends highly on how the milk was handled. Goats milk needs to be strained immediately after milking and rapidly chilled. If it's pasteurized, the pasteurization needs to be done at the minimum temp. for the minimum amount of time, or the heat can change the flavor. If it's handled properly it'll taste similar to cow's milk, but richer.

Milk that's heated at too high of a temp. for too long, or not cooled quickly enough after milking, will have a "goaty" or "bucky" taste. Other things that affect the flavor of the milk include the goat's diet, and how close she is housed to an intact buck (the smell of the buck will make the milk taste bad).

Goat's milk tastes better and is better for you than cows milk, but ONLY if care is taken when milking.
