Question: Want to open a take away joint in jodhpur, india.?
i want to open an eating joint (purely Kashmir cuisine),where people can come n take away the prepared ready to eat meal packed hygienically.this is a beginning for me.i need a mentor who can guide me well to start my Business.also i would need the help to go for all formalities before beginning.thanks

Hi: I ran a take out in the US many years ago. You will probably want to do the following:

1. Check out other popular eateries to see how they handle their take out. Observe their setups and see what they are doing right or wrong.
2. Check with local or state authourities to see if you need any special licensing to be a food vendor
3. Make sure you have the proper equipment (refrigerated units, freezer, heat table, drink cooler etc.)
4. Make sure to have good preparation space. Pre-prep whatever you can so you don't get stuck running out of something during the meal rush. Have boxes prepped and extra food in the fridge or freezer ready to heat up.
5. Create your menu and post it overhead the cash register, make inexpensive photocopies on paper for people to take with them, in case they want to phone in an order.
6. Make sure all workers wash their hands before prepping food, esp if they are handling money. So you will want a sink in the prep area near the cash register. Don't allow workers to smoke while they prep food, long hair should be tied back. Keep all utensils clean, wash them after use.

Running a take out is like the saying: Feast or Famine. During the day you will be very, very busy at mealtimes, but it may slow off in between meals. I used to hire local kids to help out during the busy times, then pay them off in cash once a week. This worked well and the kids were happy.
