Fusion and westernized sushi are not on the list yet.
There are vegetables used in sushi, although they're usually used in maki-sushi - these are the small rolls wrapped with seaweed (nori).
Then there's nigiri - which is a pad of rice, usually with a piece of fish laid on top. Some may contain a thin strip of nori. So you could ask for something like "avocado nigiri" for instance, and the sushi chef should be able to figure out how to do that. Be sure to ask for no nori. Also be sure to leave a tip for the sushi chef for making a special request. Most sushi places have a separate tips jar at the sushi bar for this reason.
Some sushi places offer soy-wrappers instead of nori. You can also buy these wrappers in any Asian grocery store (and some regular grocery stores - they'll be next to the seaweed wrappers in both cases.)
But I'd encourage you to try the fish. It's actually quite good, and doesn't smell or taste "fishy" at all.

Have a look for sweet egg (tamago) nigirizushi, and Inarizushi, which is a pouch of fried tofu filled with usually just sushi rice. Some sushi restaurants also serve nigirizushi with western influenced toppings such as hamburger, deep fried pork and prawn cutlets.

I don't know what the point would be, but yes. Seaweed is called Nori when it's used to roll sushi... its how they hold together the sticky rice that holds everything else together, so you would have to substitute that with something else, like rice paper (and it will be a little difficult to make yourself, if thats what you're thinking).

This is where the seasoned rice is served in a bowl and has the "filling" of the regular roll laid on top of it.
You could have cucumber, egg, roe, or really anything you wanted to put on it. If in a restaurant, you'd just have to say, no fish/shrimp/seaweed.

Not without seaweed but you can have it without fish I have seen it with peppers and cucumber. It is the rice and seaweed that is important not the filling.
You can probably find a vegetarian roll without seaweed or fish. It could have rice and avocado, for example.
