Different types of ham and other types of sausages are all originally from Spain.

paella would be the most traditional. but you can also try roasted asparagus in smoked ham- specifically jamon serrano. chicken croquettes- whcih can actually be made with shrimp too, are smushed ingredients friend into little wonton like packages. you could also made queso fundido which is spanish cheese, usually manchego and a bit of goat cheese melted down and maybe garnished with piquillo (red) peppers. spanish food usues a lot of arlic and particularly saffron. good luck! you're best bet would be to look up Tapas, the traditional small dishes of spain. you can find a ton online but places like barnes and noble also carry a bunch of tapas specific recipe books as they have become particularly popular in the last few years.
