I am from the Kerala........ where Dosa is one of the common food.......
If you are new with Dosa then you better seek help of someone else as the flour paste (we call it Dosa Mavu) may stick on the tawa or the spatula.........
There is no specification for the shape of the tawa...... you better use a flat one........ and use some oil to make it non sticky............(coconut oil is the best)
The main thing is that the paste must be sufficiently fine...... and sholud be kept for fermentation for sufficient time( we call it Mavu Pulikkal)............ If it is necessarily fine and fermented and you get it in better manner then you can eat one of the most nutritious food of Indian recipe world.....

90% flat with 10% concave is best. We use cow's ghee to make the tawa (called a chapati griddle in English) ready so it does not stick. There is a full list of tips at Tandoori Cooking Expert.

A flat, cast iron griddle is traditionally used and works the best. If you are in the USA, you can buy the lodge logic brand of griddle, even available in Walmart for about $12. Lasts very long and you can use it to make pancakes and crepes too.



Hi jacq, Well form making Dosa Flat one is the most recommended one. Am not sure where you are and what are the brands you get there. Just choose a non sticky one with flat pan. Have a nice one and happy cooking :)
