What cultures don't use milk or cheese in cooking?!


Question: What cultures don't use milk or cheese in cooking?
I am completely allergic to milk. I am just wondering what types of countries don't really use it in their cooking, although there is bound to be some usage in all cultures.

Answers:

Most Asian cultures don't use much, if any, dairy at all - Chinese, Japanese, Korean, Thai, Indonesian, Malaysian...

Indian cuisine uses quite a bit of dairy - especially ghee (butter), cream, and cheese.

Middle eastern cuisine uses dairy in some items as well.



Many cultures, especially in the Far East, don't eat milk products because many of them are lactose intolerant, so many countries in that region tend to avoid dairy in general.

However, even those who are lactose intolerant can usually eat milk products that have been fermented (because doing that removes much or all of the lactose), which would include yogurt and many cheeses, and they can often eat just a little of the lactose product, milk products that are "fattier" (fat-free milk is the hardest for those who are lactose intolerant).

If you are truly "allergic" to the proteins in milk though rather than just being "intolerant" of the lactose in it, you'd have to eliminate all milk-based products:

You can cook with other kinds of "milk" that aren't true mammalian milks though, similar to what vegans do since they avoid all dairy products (as well as meats) --so plant based "milks" like soy milk, rice milk, almond milk, coconut milk, etc.
Or check out vegan recipes, then just add meats/eggs/etc to them if you want.

Cheese is not used in Korea or China, and very sparingly in Japan. Think about it. It's rotted milk. We might blanch at eating balut, but you can see the unappetizing nature of cheese to them.

Thai cuisine very rarely uses dairy from my experience, almost always coconut milk which of course isn't really "milk" :)

Chinese and other Asian cuisines use very little dairy. If they do, it's almost always in desserts.



Nothing better than an Italian dairyless meal.



I would say China dont use it on most of their food.



I can't think of one that never uses either.. but indian and korean foods come to mind.
