Definition: Tandoor
A traditional tandoor is cylindrical in shape. Traditionally it is made from clay and wheat stem (for binding). It is used as oven similar to the modern day BBQ. Traditional tandoors can be found in India, Turkey, Iran, Armenia, Pakistan, Afghanistan, Middle East and most of Central Asia.
The heat source of the authentic tandoor is generated from wood as a primary source. In some instances a authentic tandoor can also use charcoal. Authentic tandoors do not use natural gas or electric convection. The clay of the tandoor causes the heat to reflect back inside and not be lost to the open air. The food in the tandoor is exposed to the raw flame giving the food a unique and unquestionable taste.
The tandoor produces very high temperatures hence making a tandoor ideal for cooking meat. Temperatures can reach as high as 480°C or 900°F. Tandoors were kept lit constantly. Everyone in the village would give wood and have a main tandoor that would remain lit 24 hours a day. In the winter months it would provide much needed heat. The concept of keeping a fire burning constant is still used today in steel plants.
