What do they eat in Chiapas, Mexico?!

Please give me a detailed answer w/ an easy recipe I can make for my class as well. I have to give my report tomorrow and need to make some food for extra credit. I cant find it on google. Please help me and don't just write - tacos. or something stupid actually write a detailed answer. Thanks, remember - easy to make recipe for about 15 students.
