Who is a historical pastry chef who made a change or impact in their domain?!


Question: Who is a historical pastry chef who made a change or impact in their domain?
I'm doing a project that requires me to write about a famous or historical person who changed the domain their field of work. I don't know any pastry chef and the only ones I know are on the food net work and their cooks. They do specialize in baking as well but is there anyone who is a historical figure who made a impact or difference in baking? Please help me and I need to know ASAP!!

Panterelli, he created some of the first pastry doughs that are still used today like, pate choux which is used for cakes, eclairs, beignets and others

Careme used Panterellis recipe to make profiteroles, thief bastard



Antonin Careme was a full-on chef but he dabbled in desserts. Cooking for Kings... Amazon. This man pretty much wrote the book on Haute Cuisine.
