Damper Dip
Ingredients
1 bunch shallots or spring onions, chopped
5 rashers bacon, fat trimmed and chopped
1 x 250 mL sour cream
250 g Philadelphia cream cheese
125 g grated tasty cheese
1 cooked damper

Method
Cook bacon in saucepan until slightly cooked, then add cheese, sour cream and cream cheese.
Stir over medium heat until melted, then turn down to low and simmer.
Cut top off damper and scoop out inside.
Place on a baking tray and bake in the oven at 180°C for 10 minutes.
Stir shallots into cheese mixture, then pour into the warmed damper to serve.

Recipe notes
Be very careful when pouring the hot mixture into the damper as cheese sticks to skin when this hot.
