veggie kebabs

veggie skewers/kabobs are always yummy. also, grilled pineapple is good!

tofu burgers, chickpea patties, zucchini and lentil cakes!

vegie burgers-boring!! but try sweet potatoes and pears-way sexier tasting. rock -it!!

veggie burgers, they would probably even like fruit or veggies on a stick (shishcabobs.... spelled wrong)

Slice them into big chunks.
And marinated tofu.
Just buy a cube of firm tofu, cut it into slices, and marinate it in some soy sauce and whatever kind of (veg friendly) marinade you think would go well.

We have made veggie burrito packages of aluminum foil with corn and black beans, green pepper, mushroom, salsa and tossed them on the grill, tasty even for carnivores.

try getting some portabella mushrooms. take off stems and clean out the gills. get some fresh spinach, a red pepper (dice it up) and saute the spinach, mushroom stem (dice it too), and red pepper in olive oil and some balsamic vinegar. put the spinach in the cleaned portabella mushrooms and set on grill for no more than 10-12 min. or you can put them in oven for that long. they are usually sprinkled with parmesan cheese before going on grill, but you can eliminate that if needed. the spinach is also good being sauted in italian dressing. very tasty for everyone. nice main course.

Baby portabella mushrooms for kebabs. Little red potatoes, parboil for like 5-7 minutes, rub with oil and salt and then throw on the grill. I second the fresh pinapple idea. To be safe, since you probably don't know your way around tofu, get a veggie burger. Read the package carefully, one boca is vegan, many others are not.

For dinner, maybe a grilled portabello mushroom "burger", marinated in balsamic vinegar. Grilled zuchini's a good side, brushed with a little olive oil and sprinkled with a little salt. For desert, grilled mango with some Soy Dream, Rice Dream, or another non-dairy ice cream alternative (go to Whole Foods for a bunch of vegan options).

Amy's Kitchen veggie burgers (these are the best imo), veggie kebabs, grilled eggplant, apples in cinnamon wrapped in a foil packet and grilled are an awesome dessert, grilled bananas are good too.

Get her a nice Vegan Garden Salad and a glass of wine and keep her off the grill. If you are cooking meat on the same grill you will gross her out.

This is late, but if you get the chance to see her again, try roasting bell peppers to place on anything! Grill the whole pepper till all sides are black and crispy (basically burnt, but you only want the outter skin like that). After they are done, throw them in a ziploc bag, close it, and let them sit for 15-20 minutes. Remove the peppers and tear away the charred skin, the stem and the seeds. Cut them up and place on whatever you want to serve (veggies burgers, other grilled veggies, grilled bread, pasta dishes, salads, etc). They get sweet and taste so yummy!
