Honestly, for someone like you, I wouldn't offer what I feel are my best meals, but my best meat-lovers meals.
:)
Breakfast
Vans brand vegan waffles or simple vegan pancakes or French toast
Recipes: http://www.cok.net/lit/recipes/breakfast...
I would like to add strawberries or some other on fruit on top, but not all people like to mix fruit and other foods.
I would also make Gimmi Lean or YVES brand vegan sausage on the side. When these are cooked with oil and rosemary, it has a sausage-y taste and feel. This would be one of the instances where you would have to take the "sausage" for what it is and not pretend it is real. It is not the same.

For lunch I might make a yummy black bean burger

I just ate this a couple of days ago; it was really good.
Or I might make tacos using a fake ground or crumbled and well-cooked tofu and a veg-friendly taco seasoning packet and green onions.
On top we could add diced tomatoes, lettuce, avocados, salsa... whatever you like, really.
~*~*~*~ *~*~*~* ~*~*~*~ ~*~*~*~* ~*~*~* ~*~*~*
At some point in the day I would make you eat a bowl of spinach or broccoli cooked with garlic, oil, a dash of lemon juice and a touch of salt.
Cliff bars make a yummy snack

Dinner would have to depend on what you like. I could make some great vega/vegetarian sushi by replacing the fish with avocado, seasoned and fried tofu, green onions or your favorite veggie.
Or I could make an awesome red pasta dish with either bocca chick patties (chick*n parmesan) or tofu and any good veggie... I like mine a bit spicy, maybe a squash of some sort.
..Or an awesome Chinese dish with noodles/ rice, tofu or Morning Star Farms *beef* or *chicken strips*, veggies and maybe an orange sauce.

And at the end of a hard no-meat day, some vegan Smirnoff vodka and mixer of choice.
... and some vegan donuts

:)
Edit- Come to think of it... maybe those are some of my best recipes.

sleep for dinner
just eat wathever you like whenever you like
I am a serious meat eater too. If I was forced against my will to eat a vegetarian diet for a day (not vegan) I would have.
Breakfast.
Cheese, Mushroom and salsa omlette with hashbrowns and toast.
Lunch:
Grilled Cheese Sandwich and tomato soup
dinner:
Spinach Lasagna
I'm not a veg but I serve this to my veg and omnivore friends for dinner and they love it; Eggplant parmigiana.
Candy sandwiches.
BREAKFAST=SOY MILK AND SERIAL
LUNCH=CALIFORNIA ROLLS(SUSI)
SNACK= A VEGETARIAN PROTEIN BAR
DINNER=SELFISH LIKE CRAB AND SHRIMPS WITH MUSHROOMS AND ASPARAGUS ON THE BBQ OR GRILL
OR VEGETARIAN BURGERS WITH FRIED SPICE TOFU AND SALAD.
DESSERT FRUIT SALAD WITH ICE CREAM OR YOGURT WITH HONEY!!!
Breakfast: Pineapple - grapes - freshly juiced apple juice
Lunch: Shredded lettuce, sliced tomatoes, thinly sliced onion, bell peppers, pickles, and two slices of veggie salami on a toasted cracked wheat roll with mustard, Vegenaise, and a drizzle of vinaigrette - root vegetable chips - ice cold Virgil's root beer
Dinner: Zucchini boats ( http://www.vegan-food.net/recipe/296/zuc... ) with chopped Tofurkey sun dried tomato "sausauge" - garlic bread - a tossed green salad with Italian dressing - vegan cupcakes filled with lingonberry jam and sweet coconut icing
That's my menu from today. Every day is awesome when you're a vegetarian!
Breakfast: Fresh fruit
Lunch: Fresh veggies, cooked with a garlic/butter sauce
Dinner: A combination of the two
Snacks: A Texas T-Bone Steak, 1" thick, with mushrooms
I'll eat the juicy Texas T-Bone, you can watch and drool and look forward to the next days menu of fresh fruit and veggies.
I have trouble with this as my brother is a serious meat eater who is nearly phobic about vegetables. The only thing we eat in common is french fries. That being said, I make a killer curry with basmati rice, mango chutney and naan (bread). If you aren't afraid of vegetables, it's what I would make. The curry has chic peas, potatoes, green beans, tomato and coconut milk. That would make a nice dinner. For lunch I could make a seitan peppersteak sub on a white roll. It features onions, mushrooms and red peppers cooked to death with seitan and a generous bunch of crushed black pepper. Cheese (soy or dairy) makes it all the more wicked. Breakfast is a toss up. I can make cinnamon buns, waffles (real maple syrup only at my house), banana bread, or if you eat eggs, an egg sandwich on a bagel with fake bacon isn't too shabby. Fresh fruit so you don't get scurvy. I also make a fantastic carrot cake that's reduced fat, vegan and half whole grain. Everyone I serve it to adores it, vegetarian or not.
Breakfast - scrambled tofu with grilled onions, salsa
Lunch - PB&J
Dinner - Oriental vegetable stir fry (tofu optional) on top of a bed of rice
Hmmm... I don't know what your tastes are veggie-wise, so this is what I would have:
Breakfast=Cheerios with milk and an apple/fruit of choice
Lunch=spring rolls with sweet and sour/soy sauce
Snack=hummus with crackers (hummus is made with chick peas so that helps out with protein)
Dinner=fried rice with teriyaki pineapples (go easy on the pineapples or it tastes really funky*)
*I recommend 1 pineapple ring because I "test" about half of it before I can get the rice done. :)
For the "best Vegetarian" meal.....
BREAKFAST:
-Omelet w/all the veggies you like & cheese...yum yum
side of salsa and or sour cream helps
Snack:
Edamame (Can be found at a supermarket)
It's entertaining
LUNCH:
Portabella Mushroom Burger w/Cheese, Grilled Onions, Lettuce, Tom.....whatever you like on it
SNACK:
Fruit or osmething
DINNER:
Eggplant Parmigian
(sounds wierd but it KINDA taste like chicken)
w/Some pasta and a Salad
DESSERT:
Ice Cream!!!!
Eat cereal and Soy Milk for Breakfast!
I would start with soybeans or fava beans for breakfast in a tomato based sauce, that is good start to the day.
For lunch, greek salad with or without feta cheese, depending if you are lacto-ova or not.
For dinner, fried eggplant with mint sandwiches, again with feta if you are lacto-ova.
Fun and Easy to Make DIY Menu For The Day !!! :)
Morning: Fruit Juice & Whole Meal Bread Sandwich.

Lunch: Grapes and Snack (Raw Vegetables with Whole meal crackers/biscuts.)
1) Wash Grapes fruits
2) Prepare Snack ,cut small cubes raw vegetables tomatoes, zucchini, lettuce, union rings, salt, Extravirgin Cold press Olive Oil, mayonnaise, chives and a little shredded chicken. Mix well. Chose Whole meal crackers or whole meal biscuts. Scoop plenty of salads and put it on the biscut/cracker and serve immediately.
Dinner: Healthy Rich Vitamin Vegetables soup and Eat with Rice or Noodle
Boil vegetable soup for 1hour (2 potatoes, 1 tomatoes, half glove garlic, 1 small union, 10 red dates(with or without), 1 or 2 stalks celery and some salt) eat with rice. If eat with noodle then pour soup over the noodle.
