I would go with at least 20#.I use that amount for my family at Holiday dinners and it feeds around 40 very well.

depends on what you put in it. I use 10lbs but I also add 2 bunches of chopped green onions. I pound of fried and then crumbled bacon, 15-18 hard-boiled eggs diced up and 1.5lbs of diced cheddar cheese, and mayo to taste. It is time consuming but oh my gosh it is so good. when ever anyone has a get together they always ask me to bring it. You can also save time and buy a bag of oscar mayer already cooked and crumbled real bacon. you should give it a try. I call it cheddar bacon potato salad.

think about how much one person would eat. then add accordingly. i would say 1/2 lbs each,15- 20lbs

Are you using Irish potatoes? You'll need about 13 pounds to serve 40 people. Are they all adults or will some be children? Wouldn't hurt to round it off to 13 1/2 pounds for adults. Assuming each adult will want a serving. A few may pass, and not want potato salad.
According to my info, 1 pound of boiled Irish potatoes yields 3 portions or 3 servings, for potato salad. If you are gonna add a lot of extra ingredients to the P. S. then cut back to about 10 pounds.

In catering, I figure the average person is going to eat about 4oz of potato salad.
