Half block Velveeta Cheese
1 Jar of Pace Picante Salsa (or similar salsa)
1 Reg. size can of Chili w/no beans
Bag of Frito chips or your favorite

Mix all together (except chips, they are for dipping in the cheese/salsa dip) in a pot over the stove and keep stirring till cheese is completely melted.

*Makes a DELICIOUS dip for ANY occasion.

This is really simple and seems to work well as a good side dish. Here are the ingredients:

- garlic clove
- thyme
- pepper to taste
- soy sauce
- olive oil
- zucchini
- mushrooms sliced
- white or red onion
- fresh spinach
- chopped fresh tomato
- grated mozzarella

Dice zucchini, mushrooms, onion, spinach, tomato and garlic. Toss in a large bowl with olive oil, thyme, soy sauce and pepper (add amounts based on your tastes). Add enough olive oil to coat but not overwhelm.

Ideally you should have individual serving bowls, like small cereal bowls w/out the lip. Add the contents to each bowl. The idea is that one bowl equals one person. Cellophane wrap the bowls and cook right away or put in fridge for next day.

This depends on your microwave, but heat individual bowls for about 3 minutes. Zucchini should still be firm but hot. Add mozzarella on top in each bowl and microwave until it melts.

This seems so simple but people are generally impressed having their own bowl and it tastes good too. Just don't over cook.

1 loaf French Bread
1 stick of butter melted
1 tablespoon of garlic
1/2 cup mayo
2 cups cheddar cheese
a few pinches of parsley

Preheat oven to 350.

Take the loaf of French bread and cut it in half length wise, like a hot dog bun!! Take the melted butter and use half of the stick on one side of the bread and then repeat with the other half. Take your mayo and layer that on top both halves of the bread, you can use more or less mayo than recipe calls for. Then sprinkle your minced garlic over both halves. Once that is complete finsh with the cheese on both halves. The parsley is optional but it looks nice and adds a little flavor. Just add that over the cheese. Bake in oven at 350 for 15-20 minutes depending on altitude and your oven!!!!

Then once the cheese has melted and the bread looks good take out and its ready to eat away.

BUNUELOS

4 eggs
1/4 cup white sugar
2 1/4 teaspoons baking powder
1 teaspoon vegetable oil
2 cups all-purpose flour
1 teaspoon salt
1 cup white sugar
1 teaspoon ground cinnamon
1 cup vegetable oil for frying

In a large bowl combine eggs with 1/4 cup of sugar and beat until thick and lemon colored. Add the 1 tsp. vegetable oil. Combine SEPARATELY 1 1/2 cups of the flour, the baking powder, and the salt. Gradually add this to the egg mixure and beat well.
Turn dough out onto a floured board (use remaining 1/2 cup flour)and knead until smooth

Shape dough into 16 balls. Roll each one into a circle about 5" in diameter. Let stand uncovered on wax paper for about 10 minutes

Heat oil in a deep fry pan to 350 degrees. Fry circles until golden brown, turning once. Drain on paper towels. Sprinkle with sugar/cinnamon mixture, store airtight.

*For the floured board you might need more than 1/2 cup. It will usually take more to get the dough completely covered with flour. Also, FLOUR YOUR HANDS before you knead, or you will be covered in a big gooey mess!!!

**Cookies will be very thin when flattened, but will rise while in oil.

*** GOOD FOR BEGINNERS, and for quick party cookies!!!
