Dessert trouble, help is much appreciated?!
I was going to do chocolate mousse but i think thats a little too easy?

Depends on whether you were planning on using the shortbread as a crust or more a bikky style.
And of course, how much time, effort and money you want to spend.
Shortbread can make a great crust for a cheesecake etc., but if you want something quick, easy and economical using just a pack of bought biscuits (or homemade) that is still very tasty and you can make very attractive, simply top it with a beaten mixture of creme fresh and/or cream cheese (either or both) - beat in castor sugar to taste, or make it different by using honey or golden syrup. Top the cheese and/or whipped cream with lots of berries, your choice. If you want to take it a step further, dribble a little bit of liqueur or cooked down berry juice (with sugar) over the lot and a bit on the serving plate.
Chocolate anything is always good, even if it is easy.
If you want to use chocolate mousse and want it to be fancy, get a bowl or serving dish and line it with plastic wrap. Arrange the shortbread on the plastic. Fill with chocolate mousse. Refrigerate until set. Put a plate upside down on top of the dish with the mousse. Turn it over and remove the plastic wrap. In French cooking this is called a Charlotte. Decorate with whipped cream and berries. Killer!

I seen something simalar on come dine with me and it was loved, its simple, yet delicious! and looks great, and would compliment shortbread!
i think chocolate mousse is fine, as long as you put some berries on the top :)xx
