What's a good thing to make with apples starting to dry out?

Just looking for ideas.

Applesauce, Dutch Apple Cake (make a white cake batter, slice the apple into thin slices and press the slices into the cake batter. Sprinkle with cinnamon and brown sugar, then bake. Yummy! Or you could make strudel. Roll out pie crust into an oblong, slice the apples onto the pie crust, sprinkle with brown sugar cinamon, dot with butter, then roll up like a jelly roll and bake until crust is browned and juices are oozing out. Help - I'm getting hungry!

You can peel the apples, then grate them on a grater (not too fine) and add them to pancake batter to make apple flavored pancakes. Add some cinammon for added flavor.
