Question: What would you guess is the spice they use in this japanese spicy ramen noodles. I want to duplicate it?
it says "gourmet spicy" on the package and it's really hot, but i like hot spicy food. But i have like 20 packets of ramen noodles that are plain and not spicy. So i want to copy the spicy kind. Do you know what i'm asking ?

Anyways, the spice packet has kind of reddish brown particles in it. And it's really hot.

I have chilly pepper and cayan pepper. Do you think it's one of those?

Answers:

Here is what Shitimi tougarasi is;
Shichimi tōgarashi (Japanese: 七味唐辛子, "seven flavor chili pepper") or simply shichimi, is a common Japanese spice mixture containing seven ingredients.[1] It is also known as nanami tōgarashi outside Japan (nana being an alternative word for "seven" (七)).

A typical blend may contain:

coarsely ground red chili pepper (the main ingredient)
ground sansho (Sichuan pepper)
roasted orange peel
black sesame seed
white sesame seed
hemp seed[2]
ground ginger.[1]
nori or aonori

A lot of noodle shops have a little jar of Shichimi Togarashi on the table.

There is a Japanese chili pepper called "shichimi" Shichi means seven in Japanese so this is a seven pepper chili pepper. It is the one usually served at Japanese restaurants with noodles.

Red chili pepper flakes and add a touch of chili powder to give it some earthiness.
