Some of the main ingredients I use for my cooking are: adobo, sazon, sofrito, and tomato sauce

(sofrito is a mixture of green & red peppers, onions, garlic, cilantro, recaito [dont know how to say this word in english] and all of the ingredients are chopped up and blended in a blender)

A couple of recipes are:
- season chicken, or pork chops, i use the adobo and sazon, then I fry or grill it.
- for yellow rice, i use oil, sofrito, adobo, sazon, tomato sauce, then i put whatever i want to make the rice with (vegetables, beans, corn, or vienna sausages etc), then i add water, and then the rice.
- for chicken stew: i use a little oil, sofrito, adobo, sazon, tomato sauce, can of mixed vegetables, chicken ( i use cut up pieces of chicken breast) potatoes, carrots if you want and then water.
- for canned beans red or pink (best w/ white rice): a little oil, sofrito, sazon, adobo, tomato sauce, beans, potatoes, pieces of ham used for cooking, and water.
...notice the pattern of my ingredients

-white rice is easiest: water, a little oil, salt is optional, let it bubble, add rice. white rice is fast and pretty much goes with everything.
**for rice (yellow and white) note the cups of water you put in pot should equal the cups of rice you will be making, I always use 1/3 cup more of water though. ex: 3 1/3 cups of water = 3 cups of rice.

I love that Spanish food has a great seasoned taste and it's not bland. I also love that there are so many varieties of rice because you can add so many different types of things to it.

there are so many more Spanish meals, and some, like pernil (pork shoulder) that i don't even know how to cook yet. I am learning more things to cook little by little but so far this is what I know

hope this helps

I am Puerto Rican and these are some of the things I cook

Spanish meals include a lot of fish and seafood because it is surrounded on three sides by water. They eat a lot of fresh fruit and use a lot of vegetables such as chickpeas and beans. Many varieties of nuts are grown in Spain. Use of garlic, olive oil and wine are used abundantly.
An interesting fact about Spanish food is the influence from the Moors. The Moors were from northwest Africa; (Morocco) and they occupied Spain in the 8th century. They were the first to cultivate oranges and brought many spices to the country-ingredients used today in their cooking.
More interesting is the influence Spain had on cuisine in the Caribbean, Central America and South America and Pacific Island nations such as the Philippines.
