Any help with empanadas?!
I'm making empanadas for my spanish class. They are due tuesday and I want to make them today, Sunday. However, I have no idea if they will taste good two days later (my teacher has a microwave we can use, but I'm not sure how they'll taste). Also, I'm having trouble finding a recipe that I like; I'm vegetarian so I was looking for a recipe with potatoes, hard boiled eggs, peppers/onions, and, if possible, beef substitute (like Yve's brand). But that brings up another thing, would soy beef taste weird two days later? I would appreciate any help, because my family is made of horrible cooks and I desperately need some help!!!!!! thanks!!!

I would make them no later then a day in advance. Personally, I wouldn't even make them that far in advance, but it seems you have no choice. And why not just make a bean and cheese empanada? You don't know if the rest of your class is going to enjoy the potato, egg, peppers, onion & soy beef mixture. I don't think I'd enjoy that.
