Chunky Salsa

INGREDIENTS:
1 Serrano chile (or Jalapeno), seeds removed, chopped fine (wear gloves)
6 medium fresh tomatoes chopped into 1/4-inch chunks
1 medium red onion chopped
3 green onions sliced thin with green tops included
1/8 cup loosely-packed fresh cilantro, finely chopped
1/4 teaspoon cumin powder
1/2 teaspoon chili powder
1/2 teaspoon oregano, crushed between your palms
1/4 teaspoon garlic powder
1 (8-ounce) can tomato sauce
1 (4-ounce) can chopped mild green chiles
2 tablespoons red wine vinegar
Salt and pepper to taste
PREPARATION:
Combine Serrano chile, tomatoes, red onion, green onions, cilantro, cumin, chili powder, oregano, garlic powder, tomato sauce, green chiles, red wine vinegar, salt, and pepper.


Chunky Salsa

2 tablespoons olive oil
1 cup coarsely chopped onion
1 cup coarsely chopped green bell pepper
1 (35-ounce) can tomatoes (about 4 cups), coarsely chopped
1 tablespoon freshly squeezed lime juice
2 teaspoons TABASCO brand Pepper Sauce
1/2 teaspoon salt
2 tablespoons chopped fresh cilantro or parsley

Heat oil in a large heavy saucepan over high heat. Add onion and bell pepper and sauté 5 to 6 minutes or until tender, stirring frequently. Add tomatoes and bring to a boil; reduce heat and simmer until liquid is reduced and salsa is slightly thickened, about 8 minutes, stirring occasionally. Remove from heat and stir in lime juice, TABASCO? brand Pepper Sauce, and salt. Cool to lukewarm and stir in cilantro. Spoon salsa into clean jars and refrigerate up to 5 days.

Makes 3 1/2 cups.

i am not a fan of spicy foods so my salsa recipe doesn't have much spice to it at all....not really any.....it tastes like "right out of the garden" salsa.....i never measure anything so forgive me for not including amounts......i use

roma tomatoes
red onion
red and green peppers
cucmber
fresh garlic
a little lemon juice
fresh cilantro
salt and pepper of course
sometimes i add a dash of fresh ginger and/or honey

Mild Chunky Salsa

# 1 lb. tomatoes, diced
# 1/2 cup onions, diced
# 1/2 cup mild green chilies, diced
# 2 Tbs. Frontier Ground Cumin Seed
# 3 Tbs. Frontier Cilantro
# 2 Tbs. Frontier Garlic Granules
# 1/4 tsp. Frontier Crushed Hot Red Pepper
# 1 Tbs. Frontier Sea Salt
# 1 tsp. Frontier Black Pepper
# 1 tsp. lemon juice

Directions: Mix all ingredients together and season to taste. For a hotter salsa add an additional 1/2 teaspoon of red peppers and 1/2 teaspoon of cumin.
