PARTY CREAM CHEESE PINWHEELS

10 large flour tortillas
2 boxes of cream cheese
1 cup pitted black olives, finely chopped
2 tablespoons pimentos, finely chopped
1 pkg ranch dressing
2 tablespoons green jalapenos, finely chopped

Soften cream cheese Mix in the powdered Ranch dressing Add the pimentos, black olives and the jalapenos.
Spread evenly over the flour tortillas using a rubber spatula. Roll tightly. Cover and chill for about one hour. Slice into pinwheels.

VEAL AND HAM TERRINE

500g ham fat
500g chicken livers
90g butter
1 large onion
125g mushrooms
4 rashers bacon
500g minced veal
125g minced pork
250g ham pieces
3 eggs
1/2 cup cream
salt, pepper
2 tablespoons brandy
3 tablespoons port
1/4 teaspoon thyme
2 bayleaves

Ask delicatessen for good-sized pieces of ham fat, about 15cm square, if you can get them.
Slice ham fat thinly.
Line base and sides of ovenproof dish (approximately 5 cup capacity) with fat.
There should be enough fat left over to cover top of terrine when it is completed.
Put chicken livers into cold salted water, allow to stand 30 minutes, drain, rinse well.
Remove any tissue from livers, then chop livers very finely.
Heat butter in frying pan, add peeled and very finely chopped onion, ver finely chopped mushrooms and very finely chopped bacon.
Saute gently until onion is tender.
Put onion mixture, chicken livers, veal , pork, very finely chopped ham, beaten eggs, cream, salt and pepper, brandy, port and thyme into bowl, mix very well.
Pour mixture into prepared dish, spreading out evenly.
Cover meat completely with thin slices of remaining fat.
Arrange bayleaves decoratively on top.
Cover dish completely with aluminium foil.
Put into baking dish with enough water to come halfway up the sides of dish.
Bake in moderate oven 2 hours.
Cool, refigerate overnight.

Wonderful for parties, with drinks, or while the steaks are cooking on the barbecue!
