An easy pasta salad
Tricolor rotini (corkscrew) pasta, cooked, rinsed and drained
Sliced black olives
cherry tomatoes, halved (or whole grape tomatoes)
mozzarella cheese, cubed
fresh zucchini, diced
bottled Italian dressing
sliced pepperoni or diced hard salami (optional)

mix all together. chill

You can easily add other ingredients that suit your fancy or your budget

You could make an ambrosia, which could be eaten as dinner or dessert. You need two large cans of pineapple chunks, two cans of Mandarin orange slices, a large bag of shredded coconut, a large bag of mini marshmallows and two containers of sour cream. Mix together. It's very yummy and very tasty.

THREE CHEESE BAKED MACARONI
3 c. elbow macaroni (cooked and drained)
1 can Cheddar cheese soup
1 c. milk
1/4 tsp. salt (optional)
1/4 tsp. pepper
1/2 c. shredded Swiss
1/2 c. shredded Cheddar
1/2 c. grated Parmesan
1 can French fried onions
Preheat oven to 350 degrees.
In 1 1/2 quart casserole, mix hot macaroni, soup, milk, seasonings and 1/4 cup of each Swiss, Cheddar and Parmesan. Add 1/2 can fried onions. Bake uncovered at 350 degrees for 25 minutes or until heated through.
Top with remaining cheese and onions. Bake uncovered 5-8 minutes until cheeses are golden brown. Makes 4-6 hearty servings.

FRITO-BEAN SALAD
1 pkg. reg. Fritos
1 can Ranch style beans
1 tomato
1 onion sweet (1020 or purple onion)
4 to 6 oz. cheddar cheese
1 small can of sliced olives, drained
1 bag of prepared lettuce of choice, Chopped into bite size
1 bottle Catalina salad dressing
In large bowl, add chopped tomato, onion and bell pepper. Drain and rinse ranch style beans. Add all ingredients. Before serving, add Fritos and Catalina salad dressing.

FUSS FREE RAVIOLI AND CHEESE BAKE

1 jar 16oz spaghetti sauce
1 can 10 oz beef broth
? cup zesty Italian dressing
2 pkg 9oz cheese filled raviolis
1 cup mozzarella cheese

Preheat oven to 375 Combine spaghetti sauce, broth and dressing in 13x9 backing dish. Add ravioli and mix lightly cover with foil.

Bake 50 minutes or until raviolis tender.
Remove foil, stir sprinkle with cheese let stand for 5 minutes or until cheese melts.

Marmalade Meat Balls

Ingredients
2 pounds fully cooked frozen meatballs
1 bottle (16-ounce) catalina salad dressing
1 cup orange marmalade
3 tablespoons Worcestershire sauce
1/2 teaspoon red pepper flakes

Instructions
Place frozen meatballs in the insert of a slow cooker. In a bowl, stir
to combine the remaining ingredients. Pour over meatballs and stir to coat. Cook on high setting for
2 to 3 hours.

A casserole, Mac & Cheese, Lasagna. Those hamburger helper mixes are a version of a casserole. Or a cold soup.

How about a bucket of KFC chicken?

POTATOES VESUVIUS

4 to 5 medium potatoes, pared and chunked
salted water, to cover potatoes
1/2 c. butter
2 eggs
1 tsp. salt
1/2 tsp. white pepper
1 c. sharp Cheddar cheese, shredded

Put potatoes in salted water and bring to a boil. Cook until potatoes are tender, about 15 minutes. Drain and mash the potatoes with the butter, eggs, salt, and pepper. Spread potatoes into a 2-quart casserole dish, and make a deep well in the center of the potatoes. Place the cheese into the well, pressing down firmly. Bake at 375° for 20-25 minutes or until cheese is melted and potatoes are heated through.

we have potlucks at work (way too often) Yesterday I brought 2 trays of egg salad sandwhiches--they were a big hit. usually I just bring a bowl of macaroni salad but I decided not to this time.
for the sake of time, if you want really quick, do a pickle tray

baked beans slaw

Chili always works for me. I do mine in a cast iron Dutch oven. I start by preheating it with a couple tablespoons of vegetable oil or canola oil. I brown three pounds of coarsely-ground beef and a diced large red onion. I then add two large bell peppers chopped, two heaping tablespoons of chili powder, a sixteen-ounce can of tomato sauce, a teaspoonful of cayenne powder and two cups of water. I bring that to a simmer and then add three cans of red beans or pinto beans from which I've drained the liquid. This will give you about six quarts of chili - enough to serve eighteen to twenty people.

Here are some of my favorite things to bring to potlocks.

This casserole is absolutely delicious. You can fix the hashbrowns by themselves as a side dish.
Hashbrown Potato/Sausage Casserole
1 pound Brown & Serve link sausages (I prefer maple flavor)
2 pounds. frozen hashbrowns potatoes, thawed
10 oz pkg cheddar cheese, grated
8 oz. sourcream
1 can cream of celery
1 tsp. salt
1 tsp. pepper
1/2 stick butter, melted
Brown sausage, and set aside. Mix all other ingredients together. Put in greased casserole. Bake at 350' for 45 minutes. Remove from oven, and place sausage on top. Cook for another 15 minutes. You can also use lil smokies or beef smoked sausage or kielbasa pieces instead of link sausages.

Yummy Meatballs
Frozen Meatballs
jar of apricot preserves
envelope of lipton onion soup
bottle of catalina or french dressing (i prefer catalina)
Mix all the ingredients together and add to meatballs.
Bake for 30-40 minutes at 350 degrees
Or on low in a crockpot for 2-3 hours.

Bake Beans
4 or 5 cans of campbells pork and beans then add ketchup, mustard, brown sugar, chopped onion, karo syrup, and lil smokies and bake them in the oven for 35-45 minutes at 350'. Talk about delicious.
I sometimes use beef smoked sausage or kielbasa pieces instead of the lil smokies. =0)

Pig Out Cake
1 box of yellow cake mix
1 small can (11oz) of mandarin oranges, undrained
1/2 c. oil
4- eggs
Icing:
12-16 oz Cool whip (I use 16 oz)
1 lg. can crushed pineapple, undrained
1 sm. pkg. instant vanilla pudding
Combine cake ingredients and mix well. Bake in rectangle pan at 350 degrees for approximately 30 minutes or until inserted tooth pick comes out clean.
Combine icing ingredients and spread on cooled cake.
Cake does need to be refrigerated until ready to serve.
* I sometimes add flaked coconut to the icing mixture.

Watergate Salad
1 lg can crushed pineapple
1 box pistachio instant pudding
1 c. mini marshmallows
1/2 c. coconut
1 lg carton Cool whip
Mix pineapple and pudding mix together; then add marshmallows,
coconut and Cool whip. Mix and Chill.

This is my version of ambrosia. My family is not too crazy about fruit cocktail, so mine is simple.
4-5 small cans of mandarin oranges, drain all the cans except one
1 bag of mini marshmellows
1 small container of sourcream
Mix all ingredients and place in bowl, cover and store in refrigerator for at least one hour. The longer the better. Believe it or not this is a sweet tasting dish, i guess its because of the marshmellows.

7-layer bar cookies...
These are YUMMY!!!!
1/2 c. butter or margarine
1 c. graham cracker crumbs
6 oz. chocolate chips
6 oz. butterscotch chips
1 1/3 c. flaked coconut
1/2 c walnuts
1 can sweetened condensed milk
Melt butter in 13x9' pan. Sprinke crumbs evenly over butter. Layer with chocolate chips, butterscotch chips, coconut and walnuts. Pour milk over all. Bake @ 350' for 30 minutes. Cool. Cut into bars.

Death by Chocolate
1 box chocolate cake mix
4 sm boxes of INSTANT Chocolate pudding
4- 8-oz. cool Whip
* oreo cookies crumbs (optional)
* melted chocolate (optional)
* chopped heath bars (optional)
* chocolate chips (optional)
This really looks nice in a large glass pyrex dish or a glass trifle bowl.
Bake cake according to directions.
and prepare pudding according to box.
When cake is cooled,
half the cake - crumbled
half the pudding ( 2 boxes prepared)
16 oz. cool whip
Repeat
* If you want you can sprinkle oreo crumbs, heath bars, and chocolate chips on the cool whip layers. On the final cool whip layer you can drizzle melted chocolate and sprinkle oreo crumbs and chocolate chips.
