Basic Marinara Sauce recipe:
Makes enough sauce for one pound of pasta.

4 tablespoons olive oil
2 large garlic cloves, minced
1 (28 ounce) can chopped tomatoes
1 teaspoon dried basil (about 10 leaves fresh)
Salt and pepper

Lightly sauté garlic in olive oil. Remove from heat. Add tomatoes, basil, salt and pepper and return to heat. Simmer for about 20 minutes, stirring occasionally.

Variations:
substitute 1 small chopped onion for garlic
substitute oregano for basil or use both
add 1/4 cup dry white wine
add 1/4 teaspoon crushed fennel seed

Delicious and Simple Ricotta with Tomato Pasta Sauce

Ingredients:
2 cups fresh ricotta
1 (400 g) can crushed tomatoes
1 yellow onion, finely diced
3 cloves garlic, crushed
1 tablespoon tomato paste
2 tablespoons freshly grated parmesan cheese
1 teaspoon salt
1 teaspoon coarse ground pepper
1 tablespoon olive oil
8 leaves fresh basil
1 (500 g) package pasta (spirals work well with this recipe)

Steps:
1. Firstly, put on a large pot of salted water and bring to the boil, add pasta to water and cook until'al dente' approximately 8- 10 minutes.

2. While pasta is on the go, finely dice your onion and crush your garlic.

3. In a saucepan, put in the olive oil, when the oil is warm, add your garlic and onion and gently saute these until they are transparent.

4. Add the ricotta to the pan, and stir through the onions and garlic well.

5. At this stage, add your salt and pepper, parmesan, crushed tomatoes and tomato paste.

6. Mix well and let simmer gently for 10 minutes.

7. Drain pasta.

8. Turn the ricotta sauce off from the heat, add your fresh basil leaves, roughly torn, into the sauce.

9. Dish up some pasta into a bowl, put some of the ricotta sauce on top of the pasta, and finish off with some extra shavings of parmesan if desired.

Seriously, something different from red sauce!

You can do a clam sauce. Real easy, and everyone loves it.

Depending on family size, this is a recipe for 4
Two cans of chop or minced clams.
Two bottles of Clam Juice.
Teaspoon of fresh chopped garlic.
Salt and pepper to taste,
2 Tablespoons Olive oil.
A pinch of oregano.
Onion flakes.

In med sauce pan, heat olive oil
add onion flakes, garlic.

Add clam juice, and juice from can clams. DO not add clams yet.
Add remaining ingredients. Bring to boil, lower heat, simmer for about 5mins, covered.
When ready to serve, put clams in to warm them up.

Real easy!!

Put in 3 or 4 qt saucepan:

Drizzle olive oil, one chopped onion, saute until soft. Then add:

2 large cans (28oz) diced tomatoes)
1 tsp dried basil
1/2 tsp dried oregano
1 tsp crushed garlic (can substitute 1/2 tsp garlic powder)
salt and pepper to taste

Simmer on low until it thickens slightly and isn't quite so watery. Serve over cooked pasta and pass the shredded parmesan and good bread.

For pasta, I like to use olive oil sometimes instead of a completely tomato-based sauce. Put a few tablespoons of olive oil in a pan, then add minced garlic, maybe one bulb or a little less to your own taste. After stirring for a few minutes on low heat, add some chopped tomatoes and saute until they are soft and absorb some of the oil. I like roma tomatoes for this. You can also add some chopped arugula after the tomatoes, but it can be hard to find. Then add more olive oil, stirring until it is warm enough to serve and enjoy :)

FAST CREAMY PASTA SAUCE

4 tablespoons butter
3 cloves garlic, pressed
1/3 c. grated Parmesan cheese
3/4 c. heavy cream
1/2 tsp. dried basil

In a small saucepan, melt butter in oil. Add garlic, cheese, and basil, stirring to blend over medium-low heat. Stir in cream.
Makes about 1 cup of sauce that can be tossed on your favorite pasta.

For a variation, try adding a can of chicken noodle soup along with your cooked pasta when sauce is done. Heat and serve.

I make a bunch and freeze what is left for a quick dinner down the road.
Brown 1 1/2 lbs of ground beef and 1/2 lb of sausage.
2 lg cans chopped Italian style tomatoes
To your taste--garlic, onion, bell pepper, celery.
Some tomato bullion or beef bullion--a couple tsps or 2 or 3 cubes.
I add a tsp of dry mustard, 2 chopped Greek peproncini peppers, 2 tbsp of brown sugar, a dash of Worcestershire sauce, some basil and a little bit of oregano. A bay leaf to be removed later---put in a slow cooker or on very low heat until veggies are done. Add fresh grated Parmesan cheese when serving. To vary you can add some chili powder or cumin the next time when you get some of the frozen out. If your sauce seems to be getting dry add a bit of water. Sorry this is not an exact happening I just make it all the time and never measure anything.

Saute' a med onion,3 cloves of garlic,1/2 c. finely chopped celery,with a little olive oil until transparent
add 1 can of chopped peeled tomateos,
1 can 16 oz tomatoe sauce, and 1 sm can of tomatoe paste
throw in a tablespoon of basil,1/2 tablespoon oregano,
some salt and pepper
bring to boil and simmer for 30 min or longer.
Fresh herbs and spices give a nice flavor but the dried are delicious too.
This sauce is so basic and versatile you may do many things with it......add meat(cooked and drained)....saute' chicken breast and pour over....

Ingredients
2 Tbsp. dry Dried Tomato & Garlic Pesto Mix
15 oz. can tomato sauce

Directions
Combine ingredients; microwave 2 minutes. Serve over pasta. Makes 2 cups sauce.

4 large plum tomatoes (about 1lb)
3 tablespoons unsalted butter
2 cloves garlic, minced
1/3 cup chicken stock
1/4 cup dry white wine
4 teaspoons finely chopped basil
1/2 teaspoon salt
1/4 teaspoon pepper

1. Peel, seed and julienne tomatoes.
2. In large skillet, melt 1 tablespoon of the butter.
3. Cook garlic until softened (about 1 minute).
4. Pour in stock and wine.
5. Simmer for 3-5 minutes or until reduced by half.
6. Add tomatoes, basil and remaining butter.
7. Cook for 2-3 minutes longer, stirring.
8. Add salt and pepper.
9. Serve with angel's hair pasta and freshly grated parmesan.
