A conventional oven is just that..you turn it on to a temperature and it cooks. A convection oven has a fan which circulates air around the food so it cooks faster and keep more of the vitamins etc. In many cases it takes less than half the time to cook with a convection oven. I have both buily in and actually use tha convection ove more often since it takes less time. One caveat, you have to watch more closely or get a cookbook specifically for convection ovens. The first couple things I cooked in the convection oven, I burned and I've been cooking for a long time! Try a web search of convection vx conventional ovens. There are so many things, I can't begin to list them all. Good luck and if you do get a convectional oven, you'll love it! Meg

a convection oven has a built in fan that moves the air around the inside of the oven, so things cook faster and more evenly. Less chance for hotspots in the oven.

I have convection oven. If you don't use the fan you can use it also as a conventional oven. It has not been one of the expensive. Perhaps Siemens, Miele or Bosch are better, but mine is an Italian one. If you make a " Braten" with convection then you have to take a screwdriver and must dismontage (???) all the oven from the backside!!! to clean the ventilator. If you do not the ventilator will produce a lot of black snow. That is very disturbing especially if you bake cake or pizza.
