Haloumi cheese: anyone have any great recipes?!

Question:

Haloumi cheese: anyone have any great recipes?

Just wondering if anyone has any good recipes using haloumi cheese. I think it is great grilled or fried in sandwiches but as a vegetarian main meal alternative to meat I don't know many ways to use it. Any suggestions would be appreciated. Thanks.

Being a former chef, I love it for so many recipes, grilled and marinated, like you in a sandwich, like Indian Paneer it can be cooked into sauces and not melt, I prefer it for saganaki.

I even make a oil cured one like feta for salads and appetizers, even warpped in filo with sundried tomatos in a cigar shape for finger foods.
