1/2 cup taco seasoned cooked ground beef
1/4 cup boston lettuce, shredded
1 roma tomato, chopped
3 tablespoons olives (sliced)
2 ounces monterey jack cheese, shredded
2 tablespoons green onions, chopped

Cut pita bread in half,
Divide beef filling between halves.
Place shredded lettuce, chopped tomato and olives inside each pita.
Divide shredded cheese between halves.
Garnish with chopped green onions and serve.

Baked Trout.
Remove head and tail and make two or three slices to the bone in each side.
Sprinkle with salt and some lemon juice. Place on, a bed of lemon slices, (from the lemons you have squeezed for the juice) on a piece of tinfoil.
Fold into a parcel and bake at 170C for about 15 minutes

CHICKEN GRILL ITALIENNE

6 whole boned, chicken breasts (skin on)
2 tablespoons green or yellow onion, finely chopped
3 cloves garlic, minced
garlic powder, salt and pepper (for sprinkling)
1/2 teaspoon paprika
1/4 cup grated Parmesan cheese
1 teaspoon fresh Rosemary, minced
2 tablespoons fresh Parsley, minced
1/4 cup each of butter and olive oil
1 1/2 cups bread crumbs
1/2 lb thinly sliced ham or prosciutto, finely chopped
12 wooden toothpicks (soaked in water for 5 minutes)

Preheat grill so that coals are white hot in time for grilling.
Melt butter in microwave, stir in oil. To this warm mixture, add Parsley, Rosemary, minced garlic, chopped onion and paprika (a pinch of rubbed sage may optionally be added if you have it on hand, but be careful not to overdo). Allow the herbs to infuse for 10 minutes. Remove 3-4 tablespoons to a separate small bowl and use this to brush both sides of the chicken.

Place chicken breasts, skin side down, on a layer of wax paper or plastic wrap. Pound lightly with the back of a heavy frying pan or meat mallet until slightly flattened out. Sprinkle chicken with salt, pepper, and garlic powder.

In a small bowl, mix together bread crumbs with Parmesan cheese and chopped ham. Add remaining butter, oil and herb mixture to bread crumbs and stir until well combined (if mixture seems too thick, add a tablespoon or so of warm water or more olive oil).

Spoon stuffing mixture into the hollow part inside the chicken breasts. Fold edges of chicken over stuffing to cover and fasten together securely with wooden toothpicks.

Place chicken (about 6 inches away) over white hot coals on grill, skin side down. Grill on one side for about 20 minutes; brush again with more butter/oil mixture (if you run out, just use olive oil spray). Turn chicken over and grill for another 20 minutes or until chicken is tender and golden. Remove toothpicks and serve.

Variation: Place a slice of provolone cheese over each breast before stuffing and rolling up.

To make a great take-along lunch, this may also be prepared in aluminum foil pouches (one for each breast). Spray the inner side of the foil with olive oil and add a slice of or two of onion to each packet for extra flavor.

when it is hot out I make a tuna salad and put it on a bed of romaine lettuce hearts with sliced tomatoes on the side and some cottage cheese.

I am making chicken breast pita pockets stuffed with fresh spinach, avocado, skim cheese, and fresh salsa...

One other favorite is tri tip shredded fine, and make soft tacos...
Add fresh salsa, and any other topping you like... Tastes great! An easy way to make the tri tip is in a slow cooker, or crock pot... Just makes sure to shred it thin as possible... I also like cabbage with it finely sliced not chopped...

Chicken tacos are great too if you boil the chicken breast for quite a long time and finely shred it... Just the same as above...

I really don't like to fry anything.... Mostly BBQ. Throw anything on the grill and it tastes great...

Seared Venison (Cervena) Medallions - about 3-4 minutes each side. Served with a deglaze sauce of chicken stock, white wine, shallots and mushrooms.

Not sure where you live so the meat maybe difficult to find. If you do see it at your butchers or market, give it a try. Very lean/high protein meat.

Very quick and easy:

Chicken Cordon Bleu (2 mins): get Tyson's chicken patties, and put one on a bun with ham and cheese.

My Aunt Jenny always makes this when we visit her in Florida. It's definitely a Southern Comfort Meal, and one of my favorites!

1 jar dried beef
6 boneless chicken breast halves
1 can (10.5 ounces) cream of mushroom soup, undiluted
4 ounces (1/2 cup ) sour cream
6 slices bacon


Line a 9x13 pan with a single layer of dried beef.
Wrap each chicken breast with bacon, then put them in the pan on top of the dried beef.
Mix sour cream with cream of mushroom soup and pour over the chicken breasts.
Cover pan with aluminum foil and bake at 250 degrees F for 2 hours or until chicken is cooked throughly.

Best served with pan juices and rice.

Home made tacos are so the way to go!!! I am definitely NOT a cook, and no one can screw up tacos! If I can do it anyone can! LOL... I always buy a kit from the grocery store. Grab some tomatoes, lettuce and sour cream and you're ready to go!

I like to use whole wheat pasta:
for one cup of pasta, I use 1/4 cup of Ricotta and some grated romano cheese, put it in the microwave for 15 seconds to get the chill out, and then mix in your cooked pasta...add salt & pepper to taste

OR another pasta dish:
cut up some fresh tomato, garlic and basil, add some cooked pasta and mix in some extra virgin olive oil. Tastes FANTASTIC at room temperature, and the longer it sits, the better it tastes..so it's great to take for a lunch for work since you don't need to reheat it.

I love cooking tacos, all you need to do is buy some taco shells, cheese, beans, ground meat, salad, taco sauce, and rice.

You could also grilling some hot dogs and hamburgers, its simple and easy. All you need is some ketchup, mustard, salad, tomato, relesh, and its also good to put some chips on the table.

Beer Bread Topped Hamburger Hotdish


Ingredients
1 lb. lean ground beef
1 cup chopped onion
1 1/2 tsp. Seasoned Salt
1 1/2 tsp. Garlic Garlic?
15 oz. can tomato sauce
1 sliced medium zucchini
Bountiful Beer Bread Mix?
1 large chopped tomato
12 oz. can beer
1 Tbsp. Dried Tomato & Garlic Pesto Mix

Directions
Saute ground beef and onion in large skillet until ground beef is no longer pink; add next 3 ingredients. Place zucchini, beef mixture and tomatoes in greased 9 x 13 casserole. Combine Bountiful Beer Bread Mix? and beer; stir to blend. Dollop batter on top of hotdish; spread evenly. Sprinkle with Dried Tomato & Garlic Pesto Mix. Bake at 350° for approximately 35 minutes or until bread is golden brown. Let stand 15 minutes before serving. Makes 8-10 servings.

make bechamel sauce, pour it in an approx. 9x5 casserole pan.
take chicken cutlets, rinse, then stuff with parsley mixture (parsley, bread crumbs, romano cheese, olive oil, minced garlic),,,,roll the cutlet and stick toothpicks to keep it from unrolling.......then you brown them in a skillet with oil, once brown on all sides put them in the casserole dish and bake at 375 for about 25min..,cover with foil before baking.

Hamburger Pie

1# ground beef
1/2 c. chopped onion
2- 16oz cut green beans, drained
1- 10 3/4 oz condensed tomato soup
1/4c. of water
salt and pepper to taste
3 med potatoes, peeled and quatered
1 beaten egg
milk
1/2 c. shredded chedder cheese
Cook hamburger and onion till meat is browned and onion is tender; drain off grease.
Stir in beans, soup, water and season with salt and pepper.
Place mixture in a pan.
Cook potatoes in salted boiling water about 20 min or until tender; drain. mash while hot; stir in egg. Add enough milk to make potatoes fluffy, yet stiff enough to hold their shape. Season with salt and pepper.
spread potatoes on top of meat mixture. Sprinkle with cheese.
Bake, uncovered, in a 350 degree oven for 25-30 minutes.

Easy Pot Roast

pot roast
potatoes-peeled and cut into chunks
baby carrots
canned whole green beans-optional
can of cream of mushroom
lipton onion soup envelope
soup can of water
place roast in roasting pan, place veggies around roast, mix soups and water and pour over roast and veggies. cook for about 1-2 hours, depending on size of roast. 400 degree oven. serve biscuits to sop up gravy... Can also cook this in a crock pot for 4-6 hours on low

This is quick and easy. A family favorite.
Saturday Chicken
5 servings
10 chicken pieces
(you dont have to use that many chicken pieces. Use how many pieces you want. the rest of the recipe stays the same.)
1 can condensed cream of mushroom (or cream of chicken)
1 cup of cream or milk
salt, garlic powder, and paprika- to taste
chopped parsley
Season chicken with salt, garlic, and paprika. Next, spread it out, in one layer baking pan. Dilute the soup with the cream; pour it over the chicken, and sprinkle parsley on top.
Bake , uncovered, at 350' for 1 hour or until juices run clear when chicken is pierced with fork.
Makes a delicious gravy. Serve with mashed potatoes or buttered noodles or rice.

Broccoli Chicken Casserole
2-3 boiled chicken breasts, diced into small chunks
(just boil the chicken for at least 10-15 minutes or until no longer pink)
Cool and then cut into chunks
1 pkg broccoli
1 can of cream of chicken
Pepperidge Farm Stuffing
1/2 c. mayonnaise
1 1/2 tsp. lemon juice
4 oz pkg mild cheddar cheese
Boiled the broccoli for 5 minutes, then drain.
Combine soup, mayonnaise, and lemon juice. Mix with broccoli and diced chicken. Sprinkle with cheese and stuffing mix. Bake at 350' for 35 minutes :0}
