Can you mix tofu with ground beef to make meatloaf?

I need to lower my fat intake and was wondering if you could mix tofu with ground beef. And if you can, is it a 50/50 mix or another ratio?

LAZY MEATLOAF

2 lb. ground round
1/2 pkg. tofu
1 bunch Chinese parsley, chopped
1 med. onion, chopped
1/4 c. shoyu

Mix ingredients together. Place meat mixture in a 9 x 13 x 2 inch glass baking dish and shape into a long loaf. Microwave on 70% power for 30 minutes. Let stand covered, 5 minutes before serving.

Yes you can. However, you should know that most of the fat in a meat loaf is going to come from the ground beef. My suggestion for a low fat meat loaf would be to use ground turkey and/or ground chicken instead of ground beef. If you have to have beef in you meat loaf you can add firm tofu, ground chicken or ground turkey in just about any ratio. To increase the moisture in you meat loaf you can add an envelope of unflavored gelatin dissolved in 1/4 cup of water to the meat before mixing.
