What are some healthy recipes? Some that won't be too expensive to make?

I'm going to college soon. I don't want to live off junk food, so any healthy recipes that are fairly cheap to make is appreciated. Level of difficulty doesn't matter much....thanks!


Answers:
I always went with easy and healthy in college. One thing I lived off of were those boneless skinless chicken tenders. One package runs about $4 and can provide 2 to 5 meals depending on how much meat you like to eat.

My favorite with the tenders is a chicken Parmesan of sorts

Basically you put the tenders in a dish, cover with spaghetti sauce and bake at 350 for 20 to 30 minutes. (depending on how efficient your oven is)
I have even made this in a toaster oven! Add some mozzarella or Parmesan cheese the last minute or two. Cook some pasta (wheat pasta if you want to go extra healthy). Toss in with the chicken and sauce, and serve with a little side salad and you will be stuffed!

those tenders are awesome though. They are great for tacos, chicken salad, breaded for home made chicken tenders. Really they cook fast and they are cheap and have very little fat.

HEART HEALTHY MEDITERRANEAN SALAD

spinach leaves
olive oil
green squash
black olives
tomato (s)
dried Rosemary, oregano, thyme and Italian seasoning
garlic powder
black and red peppers
mozzarella cheese,grated
croutons

Cut Spinach Leaves into strips. Put in a bowl for a salad.
Mix together in a separate bowl olive oil, squash, olives, tomato, seasonings, and cheese.

Toss on salad. Refrigerate for 30-60 minutes or overnight.

Top with croutons and serve. Makes a quick, healthy salad!

HEALTHY POTATO SOUP

3 cups potatoes, cubed
1 cup water
1/2 cup carrot, sliced
1/2 cup onion, diced
1/2 tsp. salt
1 chicken bouillon cube
1 1/2 cups lowfat milk
2 tbsp. flour
1/4 lb cheese, grated

Cook the vegetables (first 5 ingredients) until done. Don't drain!
Add next 4 ingredients (bouillon through cheese). Cook until thickened

HEALTHY & EASY TUNA SANDWICHES

1 can tuna
4 tbsp non-fat sour cream
2 tbsp sweet relish
1/4 cup finely shredded mozzarella cheese
dash of salt and pepper

Mix tuna, non-fat sour cream, sweet relish (add more or less to taste), cheese and seasoning. Spread on toasted bread or on crackers - it's delicious!
(I think it's best with whole wheat or squaw bread.)

well, at my house, we do this kind of veggie plate thing, you know, for snacking. We just cut up red peppers, celery, carrots, and cucumbers, put them in a large dish, and we would make this dipping sauce. i would give u the recipie, but i have no idea what it is myself!

Cheesy Chicken Pasta.
Chicken.
Poach your chicken pieces in some stock and set aside, until cool enough to handle, and de-bone.
Pasta.
Place in salted boiling water and cook until you get the degree of cooking you like.
Penne or Elbows will do very well here.
Sauce.
Make a normal white sauce and add some grated tasty cheese, remove from heat and stir until it is smooth.

Combine everything and place in an oven proof dish, sprinkle with more cheese and bake until it is bubbling and the cheese has melted and started to brown
