Best way to marinate London Broil for the grill?

London Broil is relatively tough, it needs to be tenderized. Beer is great for this. You can add anything else to the "marinade" to help with flavors; but the beer will tenderize the meat and allow more flavor to be absorbed.

I like to marinate in Italian dressing overnight. The london broil that is.

1 lb beef flank steak, get the best you can find
2 medium onions, thinly sliced
1/4 teaspoon salt
1 tablespoon butter
2 tablespoons oil
1 teaspoon lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, crushed
Cut both sides of steak in a diamond pattern, 1/8 inch deep.
Cook and stir onions and 1/4 salt in butter until onions are tender.
Keep this mixture warm.
Mix remaining ingredients; brush half on one side of the beef.
Broil 3 inches from heat for 5 minutes.
Turn and brush with remaining oil mixture.
Broil 5 more minutes.
Cut across grain in thin slices.
Serve with onions.

I have done mine this way the last few times I have made it, and it comes out spectacular every single time! It gives the meat so much flavor and makes it incredibly tender...

3 cups dry red wine
4 small sprigs fresh rosemary
4 sprigs fresh thyme
2 bay leaves
1 small onion, coarsely chopped
4 cloves garlic, coarsely chopped
3 tablespoons olive oil

1 (2 pound) flank steak
Salt and freshly ground black pepper

To prepare the steak: Place the wine, rosemary, thyme, bay leaves, onion, garlic and olive oil in a large shallow baking dish and stir to combine. Add the steak and turn to coat both sides. Cover and refrigerate at least 4 hours or overnight. Heat the grill, remove the meat from the marinade, season both sides with salt and pepper to taste and grill 6 to 7 minutes on each side. Let sit 5 minutes and slice against the grain.

Red wine or beer
Add any other shaker seasonings or fresh herbs to your taste.

dry rub montreal steak into the meat then marinate in the mix several hours or overnite for tenderness

Martha's Merlot Marinade


Ingredients
2 Tbsp. Merlot Sauce
1 Tbsp. Garlic Garlic?
1/2 cup soy sauce
1/2 cup lemon juice

Directions
Combine all ingredients. Marinate steaks for at least 2 hours. Makes about 1 cup marinade.
