Plop a couple of slices of beef shank in 3-4 quarts of water, cover, and boil them until the meat falls apart, and the marrow comes out of the bone. This may take 4 hours or so, but it's not like it takes much attention - just check the water once an hour or so, to make sure it doesn't boil dry. Give the bones to your dog - she will LOVE them - and make sure the meat is broken apart nicely.
Add a large package of Kluski (large egg noodles) and let it cook for 5 or 10 minutes. Season.
Serve over mashed potatoes. (I chop up unpeeled Russet taters, and use evaporated milk to mash them with, but you'll have your own recipe, I'm sure.)
People who've never had this think it's strange to have two starches together, but potatoes are a vegetable, and noodles are grain plus poultry. With the meat, you've covered three of the traditional four food groups; you're not using enough evaporated milk to really count.
This is a traditional comfort food among midwestern farm families, and even for church dinners, but city folks don't seem to know this exists. When I was single, I'd make it for women who raised their eyebrows at first, then professed doubt that they'd want much, since they were watching their diet, but invariably, they'd ask for seconds - and they'd ask me if I was that good at cooking *everything*.
Doggonit it, looks like I just convinced myself to make beef and noodles for lunch. Isn't father's day supposed to be about taking dad out for a great steak?
