There are many you can use:

Panela is one of them it has a different flavor but it is one of the more fresher ones.

Requeson is another one that you can use it is similar to ricotta cheese.

Queso Blanco can also be used it is similar to Monterey Jack in flavor.

Asadero is another one that is aso quiete tasty.

You can go through a latin store and go through their cheese section where all their Mexican section are. You find the Queso Freso and feel the texture of it. Find another one with the same texture. That's it!

Queso fresco means fresh cheese in spanish.

i would try a white cheese like montery

there is no substitute for queso fresco, look for fresh cheese , All the other cheeses are processed and do not have not even a similar taste. No matter what they say queso fresco cannot be substituded period!
It is very easy to find fresh cheeses at any Walmar at the freezer section , where you find tortillas. check the cheese section for fresh cheese at regular grocery stores.

Queso Fresco is usually a white natural cheese used in a lot of Latin American cooking. To me, it is all really a taste issue. Use what ever cheese you fill would taste good in the dish. For some things it might be Cheddar, for others Monterrey Jack would be good. QF usually melts very easily, so if your following a recipe you may have to take that into account and adjust your cooking slightly.
