How can i make the best fries ever !!!?!

Question:

How can i make the best fries ever !!!?

Answers:
Use new potato's instead of old ones in the store. New potato's are only available mid to late summer directly from the ground. FF must be cooked twice to get them right. Oil 350 to 375 degrees and use a fryer with a temperature setting or a pan with a thermometer you can test the oil with. Cook for 5 minutes, drain and cool completely. Then back into 350 to 375 degree oil till golden brown. McDonald's does the first cooking, then flash freezes and second cooking is done from frozen to golden brown in the restaurant fryer.

soak them in water and salt for a few hours and then make sure the oil is extremely hot when you put the fries in and salt the fries right after you take them out of the frier...im just saying what i like.

first you do not make them, you cook them''

Soak the raw potatoes in sugared water for a couple hours, then drain them & pat dry before frying.
It does something with the natural potato starch, but I forgot what.

OVEN BAKED FRENCH FRIES

5 pared lg. white potatoes
5 tbsp. melted butter
1 3/4 tsp. salt

Cut each potato into 8 or 10 lengthwise strips, 1/2 inch wide and 3/8 inch thick. Arrange in baking pan so they don't overlap. Pour melted butter over them; sprinkle with salt and bake in hot oven of 450 degrees for 30 minutes or until tender, turning them over occasionally. Serves 4.

1) Buy a french fry cutter for about $ 15.00
Not only will your french fries look better , but since they are all the same size they will all be done at the same time
2) Using russets only cut your fries. Whether or not you peel the potato is up to you But do wash the dirt off
3)Toss your fries into a bowl of ice water for 30 minutes
4) Dump the water Repeat
Meanwhile....... heat up a deep fat fryer or large pot to 325 Using Crisco to fry in
When you are at temp .....
5) thoroughly drain and pat dry your fries
6) Using a basket or what's called a spider lower small quantities of fries into the oil
7)Cook until pale and limp..Do Not Brown !! -you're blanching them
8) Drain and wait a couple of minutes between batches . This will allow the oil to return to temp - That is an often over -looked but a really important step
9 ) when all the fries are blanched spread then out on a sheet pan and cool
Meanwhile......... replace any lost Crisco and turn your fyer up to 375 .Don't even think about frying until you're at temp.
10) Repeat steps 6,7*, 8
*Cook until golden brown, salt immediatley
Eat

peel your potatoes and stick them in micro for 1 minute and make sure your oil is very hot over 375 and put in fries and they will come out crispy and tender inside. They come out very golden brown and delicious. It's easy and fast.

Double frying is the key to crisp, delicious fries!

1. Preheat oven to 200 degrees.
2. In a large dutch oven heat oil to 320 degrees.
3. peel potatoes and, EVENLY cut fries into 1/4" x 1/4" strips of equal length.
4. Place in a large bowl of cold water as you're slicing.
5. Drain potatoes thoroughly, removing any excess water.
6. When oil reaches 320 degrees, submerge the potatoes in the oil.
7. Working in small batches, fry for 2 to 3 minutes until they are pale and floppy.
8. Remove from oil, drain, and cool to room temperature.
9. Increase the temperature of the oil to 375 degrees.
10. Re-immerse fries and cook until crisp and golden brown, about 2 to 3 minutes.
11. Remove and drain on roasting rack.
12. Season with kosher salt.
13. Once again this is done is small batches and will need to be kept warm in the oven until all potatoes are fried.
