In the summer I love to make a big pot of soup and have salad with it. Depending on the soup (Tortilla Soup is my favorite) it is nice and light. With soup there is some time slaving over the stove but not much. Best part is that it tastes better the next day!

Also, I use the crockpot to make a roast with veggies. You eat the roast on the first nite then sandwiches the next day. Sometimes I will use the leftover veggies to make a Bisquik quiche.

Meatloaf, tater tot casserole, spaghetti, grilled chicken, tuna sandwiches, there are so many!

I like to bake a ham (bone in; more flavor but you can buy a smaller depending on the size of your family. With a larger ham you just get more leftovers.

The first day I serve the ham sliced with mashed potatoes, green beans, salad and biscuits.

Day two. Julianne (Sp?) strips of the ham. Set aside. Bring a large pot of salted water to boil. Add Fettuccine and cook until tender; drain. While pasta is cooking make a medium white sauce with corn starch (or flour; depending on how you make white sauce. You can follow the direction on the side of the corn starch package. I make about two cups of sauce. Also thaw about a cup of frozen green peas in the Microwave.

Once pasta is cooked and drained place into a large pasta bowl and add ham strips, pea, white sauce and about a cup of good parmasian cheese and toss into piping hot pasta. Serve with green salad and good bread.

Then the with any left over ham I have cold on any left over biscuits (I always make extra for this!) for a snack or breakfast and sometimes I make egg omlets with the ham if I have remaining.

Needless to say, we can make a ham go a long way. Hope this helps!

How about homemade Mac & Cheese?

Ingredients:

8 ounces elbow noodles (2 cups)
1 10-ounce package frozen chopped broccoli
(you can do this without broccoli)
1 3/4 cups milk, divided
3 tablespoons flour
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground white pepper
3/4 cup shredded extra-sharp Cheddar cheese
1/4 cup shredded Parmesan cheese
1 teaspoon mustard

Directions:

1. Bring a large pot of water to a boil. Cook pasta for 4 minutes. Add frozen broccoli and continue cooking, stirring occasionally, until the pasta and broccoli are just tender, 4 to 5 minutes more.
2. Meanwhile, heat 1 1/2 cups milk in another large pot over medium-high heat until just simmering. Whisk the remaining 1/4 cup milk, flour, garlic powder, salt and pepper in a small bowl until combined. Add the flour mixture to the simmering milk; return to a simmer and cook, whisking constantly, until the mixture is thickened, 2 to 3 minutes. Remove from the heat and whisk in Cheddar, Parmesan and mustard until the cheese is melted.
3. Drain the pasta and broccoli and add to the cheese sauce. Return to the heat and cook, stirring, over medium-low heat, until heated through, about 1 minute.

Chinese Chicken with Spring Onion, Ginger and Cashew nuts

Ingredients:

* 4 Chicken breasts, skinless and cut into bite-size chunks
* 100 g Cashew nuts, unsalted
* 2 tbsp Peanut/ Vegetable oil
* 1 Egg White
* 2 tbsp corn Flour
* 1 clove Garlic, finely chopped
* 3 Spring Onions, chopped
* 2 tbsp Ginger, chopped
* 2 tbsp Soy sauce
* 2 tbsp dry Sherry
* 1 tsp caster Sugar
* 1/2 tsp Chilli sauce
* 1/2 tsp Salt

Method:

* Mix corn flour, egg white and salt in a bowl, add chicken, mix well and refrigerate for 10 minutes.
* Meanwhile, stir-fry cashew nuts in a wok in the 1 tbsp of oil until golden. Remove the nuts and remove any excess oil from the wok with a kitchen paper.
* Heat the remaining oil in the wok and cook chicken, garlic and ginger in hot oil for 3 minutes, then add soy, chilli, sherry, sugar and 2 tbsp of water. Cook until sauce is thick.
* Return cashew nuts to the wok and mix well with other ingredients.
* Serve the chicken topped with spring onions and boiled rice.
