What are some good side dishes to go with pork chops?

I'm making pork chops for my dad's father's day dinner. What are some good side dishes to accompany baked pork chops?

I would slice brussel sprouts in half and sautee them with garlic and onion. maybe serve it with wild rice. or corn on the cob is always a good option- you could chop some fresh herbs and mix them into the butter to create something a little special. Good luck!

My family loves pork chops with applesauce, green beans and Augratin potatoes.

red cabbage

in the south we like greens of any kind. spinach, swiss chard, mustard, turnip or beet. cut out the tough stems and slice them about an inch across the fat part of the leaf, then cook until just tender with a clove or two of garlic ( you don't even have to peel it ) and some hot pepper flakes to taste and a little water in a covered pot. keep checking to see if they need a little more water and they don't get overcooked. put butter on them at the table.

when i make chops my sides r usually green beans with lemon and garlic butter and and roasted new potatoes with rosemary.

THREE CHEESE BAKED MACARONI
3 c. elbow macaroni (cooked and drained)
1 can Cheddar cheese soup
1 c. milk
1/4 tsp. salt (optional)
1/4 tsp. pepper
1/2 c. shredded Swiss
1/2 c. shredded Cheddar
1/2 c. grated Parmesan
1 can French fried onions
Preheat oven to 350 degrees.
In 1 1/2 quart casserole, mix hot macaroni, soup, milk, seasonings and 1/4 cup of each Swiss, Cheddar and Parmesan. Add 1/2 can fried onions. Bake uncovered at 350 degrees for 25 minutes or until heated through.
Top with remaining cheese and onions. Bake uncovered 5-8 minutes until cheeses are golden brown. Makes 4-6 hearty servings.

BAKED BEANS

4 (16-ounce) cans baked beans
1 (20-ounce) can crushed pineapple, drained
1 cup molasses
1 cup BBQ sauce
2 tablespoon yellow or brown mustard
5 slices cooked bacon, crumbled
1 (6-ounce) can french-fried onions, crushed
Salt and freshly ground black pepper
Preheat oven to 350 degrees F.
In large bowl, mix together beans, pineapple, molasses, BBQ sauce, mustard, bacon, and a third of the onions. Add some salt and pepper, to taste. Pour beans in 9 by 13-inch casserole dish and sprinkle remaining crushed onions and bacon on top. Cook in oven for 1 hour or until beans brown and bubble. Serve warm.

Parmesan Potato Gratin

2 lb (4 large) russet potatoes, peeled and thinly sliced
Salt
Freshly ground black pepper
1 lg Clove garlic, finely chopped
6 T Freshly grated Parmesan cheese
1 1/2 c Chicken stock

Preheat oven to 400F.Lightly grease oval gratin dish and arrange a layer of potatoes on bottom.

Sprinkle with salt, pepper, 1/3 garlic, and 2 tablespoons cheese.
Repeat twice more and pour over stock.

Bake for 45 minutes to 1 hour, stirring potato mixture every 20 minutes or so, or until potatoes are tender.

Place under broiler for 4 minutes or until top becomes golden brown.

Serves 4

Try this, its yummy:
Pineapple Salsa

* 200 g Pineapple, finely diced
* 3 Spring Onions, finely chopped
* 2 tbsp Lime juice
* 1/4 tsp Chilli powder
* 50 ml Vinegar
* 2 tbsp Caster Sugar
* 1/2 tsp Cumin
* 2 tbsp fresh basil, chopped
* Salt and Pepper
# To make the salsa: In a large pan, mix the pineapple, sugar, vinegar, chilli, lime juice and cumin. season and bring to boil.
# Cook over medium heat for 10 minutes until sauce has thickened.

CORN, MASHPOTATOES, GRAVY AND BISCKETS AND DST, APPLE PIE

Sauerkraut (recipe below ) just add a salad and some bread and you are good to go =)

Pork Chops and Sauerkraut

INGREDIENTS
2 tablespoons vegetable oil
4 (3/4 inch) thick pork chops
2 cloves garlic, minced
1 onion, thinly sliced
16 ounces sauerkraut
1 teaspoon caraway seed
2 tablespoons apple juice
salt and pepper to taste

DIRECTIONS

Heat oil in a large skillet over medium heat. Brown chops on all sides and remove from pan.
Add the garlic, onion, sauerkraut, caraway seed, apple juice, and salt and pepper to taste to the hot skillet. Saute for 3 to 4 minutes. Lay browned pork chops on top of sauerkraut mixture, cover, reduce heat to low and cook for 20 minutes, stirring occasionally.

Or you can go with the normal Potatoes and Applesauce.

Scalloped or Au-gratin potatoes, macaroni and cheese, baked beans, mashed potatoes.

Rice, egg noodles, spaetzle, couscous are all good.
