Best Ever Meatloaf
2 lbs. ground beef
1 to 11/2 cup oatmeal or bread or cracker crumbs
1 envelope Lipton Onion Soup Mix
1 beaten egg
1/2 cup BBQ sauce
1/2 cup water
Mix all ingredients together. Place in a loaf pan and bake in preheated oven at 350 degrees for 1 hour. Take pan out of oven and pour a small can (8 oz.) tomatoes sauce on top. Return meatloaf to oven and bake 10 to 15 minutes more. Drain grease and let set 5 minutes before slicing and serving. This is the best ever !!!!

Chicken Cordon Blue Meatloaf:

6-8 servings

2 lbs ground chicken
6-12 ounces Italian seasoned breadcrumbs
2 eggs
6 ounces smoked ham, sliced
4 ounces smoked gouda cheese, shredded
6 ounces French-fried onions
3 cups parmesan cheese
2 tablespoons minced garlic
1 teaspoon garlic salt
2 teaspoons black pepper
1 teaspoon onion powder
1/4 teaspoon cayenne pepper

1. mix ground chicken, bread crumbs, eggs, 1 cup parmesan, minced garlic,garlic salt, black pepper, cayenne pepper, onion powder, mix well.
2. take half of meat mixture and put in bottom of large loaf pan. then we layer the middle. 1 cup parmesan cheese, 2 oz. gouda, 3 oz. ham, 3 oz. french fried onions. then repeat same layer agian.
3. top with remaining meat mixture and press around sides of pan to enclose the layers.
4. bake in preheated oven at 375 degrees for about 1 hour. use meat thermometer if possible.

OMG! Please add your favorite herbs, spices, etc.

Don't leave out (if using at least 1 1/2 lbs. of burger) at least 2 eggs and bread crumbs.

Note: better meat loaves are made with a combo of ground beef, pork and chicken/turkey.......much much better flavor

My husband loves meatloaf. I think it's just okay. But I'm always playing around with different recipes, sorta in a half-a##ed way, while I've got my mind on other things. Two nights ago I made up this recipe, and my husband left me a love note the next morning raving about how great it was. A LOVE NOTE. I have to agree it was one of the best meatloaf recipes I've ever made up, so I guess I'll be making it again next time. =)

2 eggs, beaten
1 packet dry sloppy joe mix
1/2 cup ketchup
1/4 cup water
1/2 cup cracker or bread crumbs
1/4 cup parmesan cheese (I am cheap and use the kind in the tall green container)
1 large handful of shredded cheese (any kind: I used cheddar)
1/2 small onion, chopped
2 stalks celery, chopped
1 1/2 lbs. 22% ground beef

Preheat oven to 375 degrees.

In a large bowl, mix together all ingredients except meat. Make sure all the ingredients are well-combined before adding meat. Mix the meat in with your hands so it all gets mashed together.

Pour mixture into pregreased baking pan. Divide into 2 loaves. Squirt a dollop ketchup over the tops of each loaf, and spread it with a spoon so it covers the tops.

Bake, uncovered for 50-60 minutes.

Italian Meatloaf
2 lbs ground beef
2 cups breadcrumbs
1/2 cup diced onions
1/4 cup parmesan cheese
2 eggs (beaten)
1 teaspoon salt
1/4 teaspoon pepper
1 (8 ounce) can tomato sauce or pizza sauce
1/2 teaspoon oregano
4 ounces shredded mozzarella cheese


1. Combine meat, onion, crumbs, Parmesan Cheese, Eggs, and seasonings.
2. Mix well.
3. Bake at 350 for 30 minutes.
4. Pour off grease drippings.
5. Combine Tomato Sauce& Oregano.
6. Pour over Meatloaf.
7. Top Meatloaf with Mozzarella Cheese.
8. Bake an additional 30 minutes.

Long Time Family Meatloaf Recipe
1 lb. ground beef
1 egg
1 pkg. crackers, crushed or 1 c. bread crumbs, plain or flavored
1 med. onion, chopped
1 med. green pepper, chopped
1/2 c. chopped celery
1 med. apple or pear, chopped
1 tsp. pepper, black or red
1 tsp. low sodium salt
Ketchup or barbecue sauce
Your favorite cheese
3 slices bacon (optional)
Place all of the ingredients in a large bowl, except for the bacon. Now, here comes to fun part. Pretend you're a little kid again and squish everything together. It fells real gooey between your fingers. After you have had enough fun place half the mixture in a small rectangular baking dish. Place the slices of cheese on to the mixture and then place the rest of the mixture on top of the cheese.
If you choose you can place the bacon on top of the meatloaf. Preheat the oven to 350 degrees. Place the mixture in the oven and bake for about 1 hour.
Remove from oven and allow to cool for a couple of minutes.

Classic Meatloaf
Ingredients:
1 & 1/2 lbs. of lean ground beef
1 10.75 oz. can of Tomato soup
1 6 oz. package of Chicken Flavored Stovetop Stuffing
1 egg, slightly beaten
1 onion chopped
1 teaspoon dried Thyme leaves
1/4 cup Chili Sauce

Preheat oven to 350 degrees

Mix meat, 1/2 cup of Tomato soup, stuffing mix, egg, onion, & Thyme. Press into greased 8x4 loaf pan.

Bake for 55 minutes

Heat remaining Tomato soup & Chili Sauce in small saucepan. Spoon over meatloaf just before serving. Serves six.

This is a dee-lish recipe & I serve homemade scalloped potatoes, green beans, hot rolls, & appplesauce with the meatloaf. Mm Mm good!!!!

My now grown boys still love my meatloaf. We like it simple and delicious. 2lb. hamburger, 1finely chopped onion, 3-4slices of old bread, torn into small pieces, 1 egg, . I put the torn up bread in the bottom of bowl then pour on enough milk to cover bread(bead will soak it all up). Then add the rest of ingredients and mix with hands till all mixed. For flavor variation can add some Worcestershire sauce or catsup. I do this sometimes, but we like it plain. Put into a loaf pan and bake 1 1/2 hours or till done. During the last 1/2 hour can "frost" the top with mashed potatoes. This makes it a shepherds pie. Is easy and yummy. Make plenty so there is leftovers for sandwiches.

CHEESE LOVERS MEATLOAF

2 pounds chopped meat
2 slices of bread
1 large onion
1 cup tomato sauce
1 egg
1 bag of mozzarella cheese
1/4 cup of tomato sauce
Dash of salt and pepper

In mixing bowl add chopped meat, diced bread, diced onion, egg, 1/8 cup of tomato sauce, salt and pepper (mix).
Place in large pan pat to shape. Top with the rest of the tomato sauce.

Bake for 55 minutes at 350 degrees.

Take out and spread out bag of cheese on top of meatloaf and put back in oven until cheese is melted.
